You can make this easy Buffalo chicken pizza with the most simple ingredients

  • Extra-virgin olive oil – Olive oil helps contribute to both the taste and texture of the dough. 
  • Pizza dough ball – Store-bought dough from your local grocery store is the easiest to source. However, you can also buy fresh pizza dough at your favorite pizza place or make your own pizza dough.
  • Unsalted butter – Melting the butter will make it easy to mix with the Buffalo sauce.
  • Buffalo wing sauce – You can use a mild version or a spicy Buffalo sauce depending on your preferences — we like using Frank’s Red Hot Sauce. You can also make your own homemade Buffalo sauce.
  • Garlic powder – Granulated garlic helps to add extra flavor to the sauce.
  • Shredded cooked chicken – You can cook the chicken yourself (I like to use our Mississippi Chicken recipe) or use leftover rotisserie chicken.
  • Shredded mozzarella – For the best flavor get whole-fat low-moisture mozzarella cheese at the deli counter (if you can) and shred it yourself, but you can buy prepackaged mozzarella if you need to save time.
  • Blue cheese – You can find blue cheese crumbles in the cheese section at the grocery store.
  • Red onion – While you can use any kind of onion, red onion adds bright color to the pizza.
  • Fresh cilantro – Garnish the pizza after baking for added color and flavor.
  • Creamy ranch dressing – While this ingredient is optional, it’s a great dipping sauce.

How To Make Homemade Buffalo Chicken Pizza

Grab a pizza stone or pizza pan and let’s make buffalo chicken pizza with ranch!

When you are making this recipe, you’ll want to use the full recipe at the bottom of the page.

  1. Let the pizza dough rise about an hour. Then spread the dough out onto a 12-inch pizza stone or similar-sized baking sheet, using your fingers to press it out.
  2. Next, whisk the butter, buffalo sauce, and garlic powder together. Pour half of the buffalo sauce over the chicken and toss to coat.
  3. Spread the remaining buffalo sauce over the dough and top with buffalo chicken, mozzarella, blue cheese, and red onion.
  4. Lastly, bake pizza in preheated oven until the crust is golden and the cheese is melty. Garnish with chopped fresh cilantro and a drizzle of buffalo sauce or ranch dressing and serve immediately.

While this buffalo pizza recipe is fairly straightforward, there are a few ways to make sure you get the best results

  • For a pizza with a well-browned, crisp bottom crust a hot pizza stone is key. Be sure to place the stone in the cold oven to preheat with the oven. If you have time, leave the stone an extra 30 minutes in the hot oven.
  • The pizza stone will remain in the oven, so you will want to use a pizza peel to transfer your buffalo chicken pizza in and out of the oven.
  • Allow your pizza dough to come to room temperature before placing in hot oven.
  • To tell if the pizza dough is fully risen, make a small indentation in the center. If the indentation does not rise, the dough is ready.
  • For the best flavor get 6-8 ounces of whole-fat low-moisture mozzarella cheese at the deli counter (if you can) and shred it yourself.

How To Store Homemade Buffalo Chicken Pizza

Refrigerate/Leftovers

You can easily store leftovers for 2-3 days in an airtight container or tightly wrapped in aluminum foil or plastic wrap. Reheat in the oven, toaster oven, air fryer, or in a pan on the stove.

Freeze

Leftover pizza will retain its original texture after freezing for up to 2 months. Store pizza slices in a freezer-safe container or better yet, wrap individual slices in plastic wrap, bringing the wrap around twice, then wrap in a layer of aluminum foil.

Thaw frozen pizza slices in the refrigerator for a few hours until fully defrosted. Reheat or enjoy cold!

  • Protein – Trade out the chicken for pork or shrimp or try using your favorite plant-based alternative.
  • Cheese – Use your own favorite cheeses to make this your signature pizza — cheddar cheese, asiago, and parmesan are all good additions or swaps. Also, if you don’t love blue cheese you can always swap it for another (like feta) or leave it off altogether.
  • Heat – If you’re looking for a spicier sauce you can trade out the Buffalo sauce for hot sauce or you can add spices like cayenne powder or chili powder. You can also add diced jalapenos or other peppers.
  • Sauce – If you can’t bear to be without traditional tomato sauce, you can use it instead and just drizzle it with the Buffalo sauce. Similarly, if you are a white pizza fan, you can brush the crust with a garlic and butter blend or use a white sauce and also drizzle the Buffalo sauce after baking.

Ingredients

  • 1/2 tablespoon extra-virgin olive oil
  • 1 pound pizza dough ball, thawed if frozen (look for it at your local grocery store or pizzeria)
  • 4 tablespoons unsalted butter, melted
  • 1/4 cup buffalo sauce (such as Frank's), plus more for drizzling
  • 1/2 teaspoon garlic powder
  • 2 cups shredded cooked chicken
  • 2 1/2 cups shredded low-moisture mozzarella cheese *see notes
  • 1/3 c. blue cheese, crumbled
  • 1/4 Red onion, thinly sliced
  • 2 tablespoons fresh cilantro chopped (for garnish)
  • Ranch dressing for dipping (optional)

Instructions

  1. Drizzle the extra virgin olive oil on the bottom of a bowl and place the dough into the bowl. Cover with plastic wrap, and leave it sit at room temperature for about 1 hour.
  2. Preheat oven to 500°F. Spread the dough out onto a 12-inch pizza stone or similar-sized baking sheet, using your fingers to press it out.
  3. In a medium bowl whisk butter, buffalo sauce, and garlic powder until combined. Pour half of the buffalo sauce over the chicken and toss to coat.
  4. Spread the remaining buffalo sauce over the dough, leaving a border of about 1/2-inch all around. Top with sauced chicken, mozzarella, blue cheese, and red onion.
  5. Bake pizza until crust is golden and cheese is melty, 10-15 minutes. Garnish with chopped fresh cilantro and a drizzle of buffalo sauce and serve immediately.
