Have you noticed that many restaurants now serve a dipping oil in place of butter with their bread? It’s easy to do at home and while I like my butter, it’s a very delicious and healthier way to go.

Chicken Enchilada Puffs

You may have noticed,  we love cooking food that is easy to make and doesn’t require hours spent slaving over a hot stove.  Take it one step better, and make food that’s easy to eat with your fingers and my family is in heaven.

You can’t beat food you can eat with your fingers.  This recipe takes something as good as chicken enchiladas and turns them into finger food!

These were perfect for dinner, by using the jumbo size crescent rolls.  But they would make great party appetizers by using the smaller size crescent rolls. – either way, you put them together just the same.

You can mix up your seasonings…….use enchilada sauce mix and enchilada sauce, or taco.  I happened to have enchilada mix and taco sauce, so that’s what I used this time.

Mix cheeses, enchilada seasoning mix , sauce and chicken in a bowl. 

Line cookie sheet with foil and spray with no-stick spray.

add one heaping tablespoon of chicken mix, near the center of the two short ends

fold short ends over chicken

fold long end over and under, bringing it up on other side (fold or twist any extra dough on top)

sprinkle with additional shredded cheese

bake for 15 minutes at 375°

Recipe: Chicken Enchilada Puffs

Summary: This recipe takes something as good as chicken enchiladas and turns them into finger food!

Ingredients

  • 1 package jumbo crescent rolls
  • 3 oz cream cheese
  • 1/2 cup Mexican blend shredded cheese
  • 3/4 cup cooked chicken (diced or shredded)
  • 1/3 cup enchilada or taco sauce
  • 2 teaspoons enchilada or taco seasoning mix
  • 1/4 cup Mexican shredded cheese for sprinkling

Instructions

  1. Preheat oven to 375° and line cookie sheet with foil and spray with no-stick spray
  2. Place cream cheese and 1/2 cup Mexican cheese in small bowl and microwave for about 30-40 seconds, to soften.
  3. Add seasoning mix, sauce and chicken to cheese mixture and stir until combined.
  4. Unroll crescent rolls on prepared pan.
  5. Scoop 1 large heaping tablespoon of chicken mixture into the center of the two short ends of the crescent roll.
  6. Pull outer corners of the crescent roll over the chicken mixture, and then pull the long end over, completely enclosing filling.
  7. Sprinkle tops of puffs with additional shredded Mexican cheese.
  8. Bake for 15 minutes, or until golden brown.

Quick notes

I use the Tyson grilled chicken that comes in the bags near the lunch meat.

Croque Monsieur Bites

This classic French grilled ham & cheese makes a perfect lunch box companion or easy party appetizer.

 

Well, today is the day……..the first day of school!

We’ve bought our school supplies, packed the back pack, picked out the perfect out fit….but what about lunch?  I try to be creative when it comes to packing a lunch for my daughter (not always an easy task with a high school girl involved).  I think with all the hype about school lunches a lot of parents will be opting to send their kids with a packed lunch from home.

Some of our favorite meal time sandwiches are perfect for the lunch box.  I can make extra for dinner and cut them up and toss in her lunch for the next day- they’re just as good cold, and better than “cold cuts”.  If they have a microwave in the lunch room they could heat them up a bit, if desired.

My hope is, if I send her out the door with something good to eat, and she wont skip lunch.

These would also make fantastic finger food for a party.

Recipe: Croque Monsieur Bites

Summary: Summary: These sandwiches can be prepared ahead of time and reheated for an easy party appetizer.

Ingredients

  • 8 thin slices of firm sandwich bread
  • 4 sliced Swiss cheese, halved
  • 8 sliced smoked ham
  • dash grated nutmeg
  • 2 tablespoons butter, meted

Instructions

  1. Cut crust from bread.
  2. Place 4 sliced of bread on work surface, then layer each with half a slice of cheese, 2 slices of ham and remaining half slice of cheese; sprinkle with nutmeg. Top with remaining 4 slices of bread.
  3. Brush outside of sandwiches with melted butter.
  4. Cook sandwiches in large skillet over medium heat 2-3 minutes per side, or until golden brown and cheese is melted.
  5. Cut into quarters

Preparation time: 10 minute(s)

Cooking time: 6 minute(s)

Number of servings (yield): 16
