Here before us stands a classic recipe as old as time…Okay maybe not that old, but a recipe old enough that I’m sure many of you reading this remember a childhood filled with days of toasted cheese sandwiches.
The grilled cheese recipes often get labeled as a meal for kids, but who says the little ones are the only ones who get to enjoy this cheesy delicacy? While it might not be the most sophisticated of recipes, I’ll tell you right now, from the moment you bite into this sandwich you will immediately know its the best-grilled cheese you’ve ever had.
I’ve taken your classic recipe and made it totally adult meal worthy with 4 different kinds of cheese that are melted in between two pieces of perfectly crisp sourdough bread. It’s a toasted cheese recipe so good, everyone will be drooling over it!
What’s The Best Cheese To Use For A Grilled Cheese Sandwich?
When it comes to what separates a good grilled cheese from a great grilled cheese, it’s less about the type of cheese used, and more about the amount of cheese used. As long as you’re not skimping on cheese, or overflowing the bread, you really can’t go wrong.
For this recipe, I used a mix of a few of my favorite cheeses, (cheddar, provolone, gouda, and parmesan) but here are a few more options that will work just as well.
- American cheese for a simple and classic recipe
- Brie if you want to get fancy with it
- Mozzarella if you’re more of a white cheese fan
How To Make The Best Grilled Cheese
You might know the bare bones of what’s needed to make a grilled cheese, but if you follow the easy instructions below, you’ll come out with not just any old grilled cheese, but the most amazing grilled cheese sandwich!
To start, mix softened butter, mayo, parmesan, and garlic until well combined and spread the butter-mayo mixture on one side of each slice of bread. Place 2 slices of bread, butter side down in skillet or griddle. Layer each piece of bread with each cheese and then top with remaining slices of buttered bread.
Once the sandwiches are assembled, cook until golden and cheese begins to melt, then flip and grill until the other side is golden brown and cheese is completely melted. When both sides are toasted, transfer to a plate to serve.
Can I Add More Toppings To My Grilled Cheese?
Of course! If you want to make your grilled cheese a little more interesting, there are lots of different topping that go perfectly with this simple recipe.
- Proteins: grilled or shredded chicken, bacon, ham
- Veggies: spinach, sliced bell peppers, cucumber
- Fruits: apple slices, tomatoes, avocado

Any time I make a toasted cheese, especially in the winter, I always have to make my favorite roasted tomato soup to go along with it. I look at this pair of foods kind of like spaghetti and meatballs, they just belong together.

The Best Grilled Cheese Sandwich
The BEST Grilled Cheese Sandwich is grilled until toasty and golden and loaded with gooey cheese on hearty bread. Add a bowl of tomato soup and you have a match made in heaven!
Ingredients
- 2 tablespoons butter, softened
- 2 tablespoons mayo
- 1/4 cup fresh parmesan cheese
- 1 teaspoon minced garlic (or 1/4 teaspoon garlic powder)
- 4 slices of sourdough or Italian bread
- 4 slices gouda cheese
- 4 slices provolone cheese
- 4 slices sharp cheddar cheese
Instructions
- In a small bowl mix softened butter, mayo, parmesan, and garlic until well combined.
- Spread butter-mayo mixture on one side of each slice of bread. Pace 2 slices of bread, butter side down in skillet or griddle. Layer each piece of bread with two slices of each cheese. Top with remaining slices of buttered bread (butter side up).
- Heat over medium heat and cook until golden and cheese begins to melt - about 4-5 minutes (you can cover with a lid to speed up the melting process.) Flip and grill until the other side is golden brown and cheese is completely melted (about another 4-5 minutes).
- Once both sides are toasted, transfer to a plate to serve.
Notes
You may need to adjust the cheese slices depending on the size of your bread slices or preference.

I never thought to season the butter! Brilliant
For extra kick, we like to spread jalapeño cream cheese inside the bread, and add pepper jack cheese. Really good! Throw some cooked bacon between the slices and it’s almost like a jalapeño popper grilled cheese.
