S’mores Cookies

 

Take a chewy graham cookie, top it with toasted marshmallow and crown it with a drizzle of chocolate and you have a S’mores Cookie, a fun twist on the classic campfire treat.

I can  usually judge how good a recipe is, by how long it lasts in my house.

These cookies did not last long!  I actually got the “is this all you made” look from each family member.

Because it’s summer, and all I can think about it oozy marshmallow and melty chocolate, I thought Jen’s Chewy Graham Cookies would be the perfect base for a S’Mores Cookie.

Let’s take a look at how I did it……….

  • Bake a batch of Chewy Graham Cookies, from My Kitchen Addiction
  • cut up marshmallows and place on top of baked cookies (I used the Jet-Puffed S’mores Marshmallows because they are flat}
  • put marshmallow topped cookies back in the oven on broil and watch closely (should only take 1-2 mins to get brown) seriously, don’t take your eyes off them, once they start to brown, they will burn very quickly.
  • melt about a cup of chocolate chips with a tablespoon of shortening in the microwave, and drizzle over the cookies using a spoon
  • Enjoy!………they are especially good warm ;)

The gooey marshmallow, the melty chocolate, the chewy graham cookies……….it doesn’t get much better, this is one delicious cookie!!

    It’s been raining here so much that we don’t get to have a campfire as much as we’d like. These cookies are the perfect answer to not being able to do S’mores over the firepit! Thank you Cheryl and Jen!

    I’m SO happy that that cookie recipe uses regular flour. Just because we don’t have graham flour over here and I was going back and forth while in the US on bringing graham flour. And of course, I didn’t get it and in the last three weeks I’ve seen three graham flour recipes I’m dying to try.

    I just couldn’t get these out of my head so I tried making them! Only I used homemade marshmallows. And they completely melted in the oven. So I turned them into s’mores cookie sandwiches. Sooo good. Even my German husband (you know, I think the Europeans are marshmallow haters so this means something) loved them. Thanks so much! I took pictures and will post them on Wednesday. :)

    Oh and the cookie part is great, too! Even super healthified, it was awesome. Hooray for my first TidyMom recipe coming out like a dream. :D

    Okay, these Smores Cookies are EVIL!!! They just might be my new weakness that lands me with Diabetes. If only all of the good for you health foods looked as good as these, we would all be skinny! :)
