Ingredients
- 1 pound ground beef (93% lean)
- ½ cup chopped red bell pepper
- ½ cup chopped green bell pepper
- ½ cup chopped yellow onion
- 2 garlic cloves, minced
- 1 teaspoon coarse kosher salt
- 1 teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 3 tablespoons unsalted butter
- 3 tablespoons flour
- 1 ½ cup milk
- 2 cups shredded cheddar cheese, divided
- 1 cup sour cream
- 2-pound bag frozen tater tots
- 2 tablespoons chopped parsley
Instructions
- Preheat the oven to 350° F. Grease a 9x13 baking dish and set aside.
- First add the ground beef, peppers, onion, minced garlic, salt, pepper, onion powder, and garlic powder to a large skillet. Cook over medium heat for 6-8 minutes.
- Add the butter and flour to the pan with seasoned meat. Mix for 2-3 minutes.
- Pour the milk into the meat mixture. Stir for 2-3 minutes or until thick.
- Blend in 1 cup of cheese and the sour cream, stirring until smooth.
- Transfer the meat and cheese mixture to the prepared baking dish.
- Top with tater tots. (You will have tater tots left over).
- Place the dish in a preheated oven and bake for 25 minutes.
- Broil on high or 500°F for 5 minutes.
- Top with the remainder of the cheese.
- Broil for another 3-5 minutes or until the cheese is slightly brown.
- Garnish the top with parsley.
