Storage

Since the tater tots are on top, they keep their shape and consistency fairly well when stored, making this a terrific dish for meal prepping. If you want them to remain crisp, be sure to reheat in the oven, though you can use the microwave in a pinch.

To store leftover tater tot casserole in the refrigerator, either cover the dish with plastic wrap or aluminum foil or transfer it to an airtight container and keep it in the fridge for 5 days.

Ingredients

  • 1 pound ground beef (93% lean)
  • ½ cup chopped red bell pepper
  • ½ cup chopped green bell pepper
  • ½ cup chopped yellow onion
  • 2 garlic cloves, minced
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 3 tablespoons unsalted butter
  • 3 tablespoons flour
  • 1 ½ cup milk
  • 2 cups shredded cheddar cheese, divided
  • 1 cup sour cream
  • 2-pound bag frozen tater tots
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat the oven to 350° F. Grease a 9x13 baking dish and set aside.
  2. First add the ground beef, peppers, onion, minced garlic, salt, pepper, onion powder, and garlic powder to a large skillet. Cook over medium heat for 6-8 minutes. 
  3. Add the butter and flour to the pan with seasoned meat. Mix for 2-3 minutes. 
  4. Pour the milk into the meat mixture. Stir for 2-3 minutes or until thick. 
  5. Blend in 1 cup of cheese and the sour cream, stirring until smooth. 
  6. Transfer the meat and cheese mixture to the prepared baking dish.
  7. Top with tater tots. (You will have tater tots left over).
  8. Place the dish in a preheated oven and bake for 25 minutes. 
  9. Broil on high or 500°F for 5 minutes. 
  10. Top with the remainder of the cheese. 
  11. Broil for another 3-5 minutes or until the cheese is slightly brown.
  12. Garnish the top with parsley.
