It finally feels like we’re saying goodbye to winter around here and honestly, good riddance. Spring is just around the corner and you know what that means… It’s time to break out all of my favorite springtime recipes, starting with this amazing one-pot lemon artichoke pasta.

This citrusy linguine pasta dish filled with artichoke hearts and chicken is about to shake up your dinner menu in all the right ways. What’s even better than the flavor combination is how easy it is to make!

I love a dinner I can get on the table in 30 minutes or less, and if you do too then this lemon artichoke pasta is just the dinner for you. You won’t believe it until you try it that a dish with just a handful of ingredients could taste this good.

One-pot pasta recipes are a true gift to the world of busy people and those who refuse to dirty every pot and pan in the kitchen to make one recipe.

A recipe like this one-pot artichoke pasta is just what it sounds like. It’s a recipe that doesn’t require three different pots for each step. Instead, you can cook the pasta from start to finish and only have ONE messy pan to deal with after.

How To Make Lemon Artichoke Pasta

Making your own lemon artichoke pasta is easy as can be.  First, you’ll prep and cook your chicken, transfer to a plate and loosely cover with foil. Next, add your spices and liquid ingredients to the pan to prep the sauce and add the pasta to the liquids in the skillet breaking noodles in half if needed.

Cook pasta, stirring occasionally until done, and promptly remove the skillet from heat and stir in artichoke hearts, spinach, cheese, lemon zest, lemon juice, and crushed red pepper. Stir until combined and serve with chicken breasts.

Ways To Serve Lemon Artichoke Pasta

There’s really no wrong way to serve lemon artichoke pasta. Dish it up as the main course at dinner with a side salad, and homemade bread. Or serve it for a hearty lunch alongside a refreshing glass of raspberry tea. No matter when or where you serve this one-pot pasta, it is sure to be a hit.

You can also get creative with how you incorporate the chicken into the dish. Use 2 chicken breasts if you’d like to slice the chicken and add to the pasta or use 4 chicken breasts if you’d rather serve the pasta more as a side to the chicken. To make it a vegetarian dish, simply omit the chicken from the recipe.

How To Store Leftover Pasta 

I can’t be the only one who thinks pasta is almost even better the next day right? Leftover lemon artichoke pasta has all the same great taste but intensified as the ingredients had the chance to really soak into each other overnight.

To store your leftover pasta, simply let the dish cool completely, then transfer it to an airtight container. Once covered, you can either store it in the refrigerator for up to 4 days, or in the freezer for up to 3 months.

How To Reheat Lemon Artichoke Pasta

Over the years I have tried pretty much all of the popular ways to reheat pasta, and it wasn’t until a few years ago that I finally perfected the process.

To reheat your pasta in the microwave place the desired amount on your plate and form a small circle in the middle(exposing a small portion of the plate). In that small hole in the ring of pasta, drizzle a splash of water, and place in the microwave for 23-30 seconds. Remove from the microwave, stir and heat for another 20-30 seconds.

If you prefer to reheat without using a microwave, place the leftover pasta in a skillet and heat on low until the desired temperature has been reached.

One-Pot Lemon Artichoke Pasta

One-Pot Lemon Artichoke Pasta with Chicken features tender pasta layered with flavorful artichoke hearts, fresh spinach and grated Parmesan with the creamiest lemon sauce, made in less than 30 min!

Ingredients

  • 1 tablespoon oil
  • 2-4* small chicken breasts
  • seasoned salt and pepper
  • 3 tablespoons butter
  • 1 teaspoon minced garlic
  • 1½ cups chicken broth
  • 1½ cups milk
  • 1 teaspoon onion flakes
  • 1 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces linguine (or pasta of choice)
  • 14 ounce jar of marinated artichoke hearts, drained
  • 1/2 cup chopped fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon zest
  • juice from 1/2 a lemon
  • pinch of crushed red pepper

Instructions

  1. Season chicken breasts with salt and pepper and pound to 1-inch thickness if they are thick.
  2. Heat oil in a large skillet over medium-high heat. Add chicken and cook for 4 minutes on each side (or until internal temperature reaches 165° F). Transfer cooked chicken to a plate and loosely cover with foil.
  3. Melt butter in the skillet over medium heat. Add garlic and saute 1 minute or until fragrant. Add chicken broth, milk, onion flakes, oregano, salt and pepper to the skillet.
  4. Add pasta to the liquids in the skillet breaking noodles in half if needed. Bring to a boil, cover and reduce heat to a low simmer. Cook pasta, stirring occasionally for about 12 minutes. If the sauce is still thin, continue simmering a few minutes longer (sauce will thicken a little as it cools).
  5. Remove skillet from heat and stir in artichoke hearts, spinach, cheese, lemon zest, lemon juice, and crushed red pepper. Stir until combined and serve with chicken breasts*.

Notes

  • *Use 2 chicken breasts if you'd like to slice the chicken and add to the pasta or use 4 chicken breasts if you'd rather serve the pasta more as a side to the chicken.
  • *This pasta is just as delicious without the chicken, as a vegetarian meal or side dish with other entrées such as salmon or BBQ.
