Kitchen Tips

Instead of a baking dish, you can use a cast iron skillet, muffin tin, or disposable pan.

Adjust the measurements to make either double or half but bake it for the same amount of time. If you double the recipe, be sure to use 9 x 13 pan.

You can prepare the egg mixture ahead of time and store it in an airtight container in the refrigerator overnight or transfer to a mason jar to take when traveling or on camping trips.

Storage

These simple scrambled eggs can be stored in the fridge or freezer, making them perfect for make-ahead meals.

Refrigerate/Leftovers

Once the eggs have cooled, cover the dish with plastic wrap or aluminum foil, or transfer them to an airtight container. Store them in the refrigerator for up to 3 days.

Freeze

Place the eggs in a freezer bag and store for up to 3 months. You can also prepare a breakfast burrito or entire breakfast sandwiches — just wrap them in parchment paper, and store in freezer bags for a quick and easy meal you can heat in the oven or microwave.

Variations or Additions

  • Meat – Meat lovers can stir in cooked ham, bacon, or breakfast sausage before baking.
  • Vegetables – Add in spinach, mushrooms, or diced bell peppers and onions.
  • Cheese – Sprinkle shredded cheese over the top before the last few minutes of baking. Monterey Jack and cheddar cheese both work well, but you can use your own favorite cheese, too.
  • Heat – Give the eggs a spicy kick with a few dashes of hot sauce or by stirring in diced jalapenos. For gentle heat, stir in some ground black pepper.
  • Dairy – Instead of milk you can use heavy cream. You can also substitute sour cream for some or all of the milk. Or for a non-dairy option, use almond milk or coconut milk instead.
  • Benedict – Make a scrambled egg version of eggs Benedict by prepping toasted English muffins and hollandaise sauce while the eggs are baking.
