Zesty Lime Grilled Shrimp Bowl With Roasted Corn

Something about summer makes me want all the light and fresh dinners I can get my hands on. This Zesty Lime Grilled Shrimp Bowl with Roasted Corn gives you just that! Not to mention it can all be cooked on the grill, so there’s no need to heat up the whole house by turning on the oven. 

This shrimp bowl is a flavor-packed dish coated in a zesty lime vinaigrette that will make your tastebuds jump for joy! Serve it on a bed of roasted corn and top with any and all of your favorite toppings for a complete meal you’ll love.

How To Make A Zesty Lime Grilled Shrimp Bowl

Heat a grill to medium-high heat. Then, in a medium bowl mix a little olive oil, paprika, garlic, and salt and pepper to taste. Add shrimp and toss to coat.

Place the seasoned shrimp in a grill basket or on skewers. Shuck and prepare corn on the cob for the grill.
Whisk a little olive oil, lime juice, honey, and yogurt together in a small bowl. Add some crushed red pepper, lime zest and salt, and pepper to taste, whisk again and set aside.

Grill the corn until tender and slightly charred, turning occasionally during cooking. Remove corn from grill and set aside to cool a little. Grill the shrimp until it has turned pink and remove from the grill. Cut the corn off the cob. Serve roasted corn with grilled shrimp and drizzle with lime vinaigrette.

Note: You can double the vinegarette I really can’t tell you enough just how good this vinaigrette is. Use the left-over on grilled meats such as chicken and steak, or serving it up more appetizer style with toasted bread for dipping. 

Tips for Cooking the Perfect Shrimp

Seafood can seem like it would be hard to prepare, but it’s actually pretty simple especially shrimp! If you’re a little worried about cooking shrimp for the first time, here are a few tips to help you ease your way into a delicious home-cooked meal. 

  • Try to use fresh when possible, but if you are using frozen shrimp, make sure to let it completely thaw out before cooking
  • For a lightning-fast prep process, buy peeled and deveined shrimp so you don’t have to spend time doing it yourself. 
  • Before cooking, marinate the shrimp for a few hours before cooking it. It will allow the sauce to really soak in and give you the intense flavor you’ll love. 
  • A tip for being able to tell when the shrimp is cooked is to look at the color of the flesh. As it cooks, it will turn an opaque whitish pink color. If you see any signs of gray flesh still present, the shrimp isn’t done yet. 
  • The shrimp should curl up into a loose “C” shape when properly cooked. If they have curled up into a tight “O” shape, then the shrimp is most likely overcooked.

There are lots of reasons why you should want to eat shrimp, partially because of its versatility in recipes and its quick cook time, but what are some other reasons that make shrimp a go-to protein option?  

Shrimp contains a dense list of important nutrients your body needs, and it’s also quite low in calories. 

A 3-ounce serving will only have 84 calories and is packed with 18 grams of protein. You will also find 20 different vitamins and minerals, selenium, a mineral that may help reduce inflammation and promote heart health.

What to Add To A Grilled Shrimp Bowl?

When it comes to making this grilled shrimp bowl, you can really customize it any way you want. Sometimes I like to use this as a “kitchen sink” recipe where I throw in whatever I have on hand. 

Here are a few mix-ins I like to add: 

  • avocado
  • rice
  • mixed greens
  • arugula
  • black beans
  • tomatoes
  • salsa 

You can also get creative with the corn too. I love using this Chili Lime Corn recipe, but you can also just brush the corn with olive oil and season with salt and pepper and grill the same way. Another option is canned fire-roasted corn, or the Trader Joes frozen fire-roasted corn that is really good! 

How Long Does A Grilled Shrimp Bowl Keep?

Shrimp of any kind is highly perishable, meaning it doesn’t store well once cooked. While I would love to be able to meal prep enough of this recipe to eat for lunch all week long, I don’t suggest trying to do that. 

The cooked shrimp will keep about 1-2 day when stored in an airtight container in the refrigerator. So, only make an amount that you can eat within a day or two.

Zesty Lime Grilled Shrimp Bowl with Roasted Corn

Ingredients

  • 3 ears Chili Lime Corn On The Cob
  • 1 pound raw jumbo shrimp, peeled and deveined
  • 3 tablespoons olive oil, divided
  • 1 teaspoon paprika
  • 1 teaspoon minced garlic
  • 1/2 lime, juice and zest
  • 3 tablespoons plain Greek yogurt
  • 1/2 tablespoon honey
  • pinch of crushed red pepper
  • salt and pepper to taste

Instructions

  1. Heat grill to medium-high heat.
  2. In a medium bowl mix 1 tablespoon of olive oil, paprika, garlic and salt and pepper to taste. Add shrimp and toss to coat.
  3. Place shrimp in a grill basket or on skewers. Shuck and prepare chili lime corn on the cob for the grill.
  4. Whisk 1 tablespoon of olive oil, lime juice, honey, and yogurt together in a small bowl. Add crushed red pepper, lime zest and salt, and pepper to taste, whisk again and set aside.
  5. Grill the corn until tender and slightly charred, about 10-12 minutes, turning occasionally during cooking. Remove corn from grill and set aside to cool a little. Grill the shrimp for about 4 minutes (2 minutes per sides) or until shrimp turn pink. Remove from grill.
  6. Cut the corn off the cob. Serve roasted corn with grilled shrimp and drizzle with lime vinaigrette.

Notes

For more flavor, marinate shrimp in oil mixture in refrigerator up to 4 hours before removing from marinade and grilling as directed. Discard remaining marinade.
