I’m only a morning person one day of the year and that’s Christmas day. Getting up early is so worth it when you’re greeted with presents, a warm fire, and a breakfast that dreams are made of.
This Gingerbread French Toast Bake is the perfect way to start or end your Christmas morning. Each bite is better than the next with the sweet custardy flavor and texture of a simple french toast combined with your favorite gingerbread spices, and a sweet cinnamon bread. This recipe is a true Christmas gift even Santa himself would want.

How To Make Gingerbread French Toast

We all love french toast for breakfast, but the same old plain french toast can get boring after a while. I love mixing things up and adding an extra special holiday twist to this classic breakfast dish.
Start by whisking the milk, eggs, syrup, molasses, and spices together, add the butter and mix until well incorporated. Next pour the egg mixture over the bread, then cover the dish with foil and refrigerate.
Once the mixture has had time to soak, bake until slices are firm and golden brown. Remove the dish from the oven and allow to cool before dusting with powdered sugar. Now you’re ready to serve! Just don’t forget the butter and maple syrup!
Take Your Gingerbread French Toast to the Next Level
Choose the perfect bread: While yes just about any bread you can make into slices will work for this, that doesn’t mean there aren’t superior types of bread when it comes to making a choice for this recipe. To really wow your tastebuds I highly suggest using cinnamon bread.
I love the Costco cinnamon bread loaves, but any cinnamon bread will just as good. The spices and flavors in the bread really make this recipe jump into the “out of this world” category. It’s truly amazing.
Let it soak overnight: If you need this recipe to be ready in a crunch it’s perfectly fine to only let it refrigerate for an hour, but if you have the time I highly suggest letting the mixture soak all night. This allows the everything to really soak in, giving you the best and most intense flavors.
Don’t forget the toppings: This gingerbread french toast is so good I could definitely eat the whole dish plain with absolutely nothing on it, but I love to add some extra treats on top to make it that much better.
For the basic version just add syrup and powdered sugar. If you want to add a little extra crunch try adding some toasted pecans, or candied walnuts.

- 1 loaf of sliced cinnamon bread (or French bread, cut into thick slices)
- 1/2 cup milk
- 3 large eggs
- 1/4 cup maple syrup
- 1/4 cup molasses
- 1 teaspoon each: ground allspice and ground ginger
- 1/2 teaspoon each: ground cinnamon*, ground nutmeg, and ground cloves
- 1/4 teaspoon salt
- 1/4 cup melted butter, cooled
- powdered sugar for dusting
- Spray a 9x13-inch baking dish with non-stick spray
- Arrange bread slices in prepared dish, standing at and angle and overlapping.
- In a medium mixing bowl, whisk milk, eggs, syrup, molasses, and spices together. Add cooled melted butter and mix until well incorporated.
- Pour egg mixture over bread, turning bread to ensure slices are soaked. Cover dish with foil and refrigerate at least one hour or overnight.
- When ready to bake, preheat oven to 350° F.
- Remove dish from the refrigerator and uncover. Bake 20-25 minutes or until slices are firm and golden brown.
- Remove dish from oven, allow to cool 5-10 minutes before dusting with powdered sugar. Serve with butter and maple syrup.
- if you use french bread instead of cinnamon bread, you may want to increase the ground cinnamon to 1 teaspoon.
