Creamy Chorizo Cheese Dip

I’m pretty sure my greatest love in life is cheese! It’s always there for me and never seems to let me down, especially when it comes in the form of the pure, creamy goodness that is Borden® Cheese. Their high-quality cheese made with wholesome ingredients is seriously what makes this chorizo cheese dip in a world of its own! 

 Not only is this dip cheesy to your heart’s content, but it’s also packed with fresh flavors like tomatoes, green chilies, and jalapeno to add that extra little kick we all crave! Is your mouth watering yet, because mine sure is! 

In under 30 minutes, you can take a traditional game day recipe and turn it into something memorable with just a handful of simple and wholesome ingredients!

Creamy Chorizo Cheese Dip in cast iron skillet and chips

What is Chorizo?

Okay, let’s first tackle what might be the elephant in the room. We all hear about chorizo all the time, and maybe we even know it’s something we like, but can you actually describe what it is? 

If your answer was no, don’t be ashamed because honestly for a while I wasn’t too sure either. To get rid of all that mystery about this amazingly delicious meat product, here’s the low down on chorizo. 

Chorizo is a highly seasoned chopped or ground pork sausage used in Spanish and Mexican cuisine. Mexican chorizo is made with fresh (raw, uncooked) pork, while the Spanish version is usually smoked. The two types of chorizo can have very different flavors as they are prepared and seasoned differently. Both are typically a bit spicy in nature. 

How to Make Chorizo Cheese Dip

Cheese dip is always a go-to for me because it’s such a simple yet delicious dish to make, and everyone always loves it! This recipe is no different, with easy instructions and high-quality ingredients like Borden® Cheese made with real milk rich in protein and calcium. 

To perfect this recipe all you have to do is brown chorizo in a large non-stick skillet over medium heat until slightly crispy and transfer to a paper towel-lined plate. Add diced tomatoes, chopped green chiles, minced garlic, and minced jalapeno pepper to pan. Cook over medium heat until heated through. Reduce heat and gradually whisk in milk until thickened.

Remove the skillet from heat stir in the chorizo, then begin adding cheese, one handful at a time until it is well mixed. Lastly, garnish with your desired toppings, serve, and most importantly, enjoy! 

Get the Party Started With This Creamy Chorizo Cheese Dip!

With the Big Game coming up we all know what that means… apps on apps on apps. At the game day parties, the real fight is to see who has the best dish to bring to the table.

It’s a tough fight with classics like buffalo chicken dips, and ham and cheese sliders out there, but I’m here to tell you this creamy queso cheese dip will be the underdog that comes out and wins the title of the best appetizer of the year. 

Whether you’re throwing the party or just attending, here’s a few tips to take things to the next level: 

While food is VERY important, it’s not the only thing that should be thought of. Have an array of different drinks available for everyone, and let them know they are welcome to BYOB if they want a particular drink. This is the perfect way to make sure no one is stuck drinking something they hate or nothing at all. 

Pick up some festive plates and cups. They might seem a little cheesy, but let’s face it, who doesn’t love a cute little Insta worthy matching plate and cup to show you’re at the fun party. It’s also a great way to ensure you aren’t doing dozens of dishes at the end of the night! 

Secrets for a Perfect Chorizo Cheese Dip Every Time!

Invest in a skillet splatter screen: This little tip is honestly a lifesaver, trust me! I learned the hard way that chorizo is a meat that really wants to pop and splatter as it cooks, even with the temperature low. 

So, to avoid any injury I suggest grabbing a splatter screen to place over the skillet and to hold in front of you as you stir the meat. It should protect you from most of the splattering and will make for a much easier time cooking the chorizo. 

Evenly Mix The Cheese: To make sure your cheese is perfectly melted and mixed into the other ingredients, you’ll want to add it in one handful at a time and stir until completely melted. 

For this recipe, I used the Borden® Cheese Monterey Jack Shreds, but for an even easier melting experience, I recommend the Borden® Cheese Thick Cut Shreds. They are perfect for melting and offer a wider shred that is nearly five times larger than traditional shreds, perfect for creating that smooth, creamy coverage you need in all your favorite game day recipes.

Warm Your Skillet: We all know the worst part about cheese dip is that it gets cold way too fast! One way to prolong that coveted straight off the stove warmth is to serve the dip in a warmed skillet. 

Just as the chorizo cheese dip is about done begin to warm an ovenproof dish, or cast-iron skillet in the oven for about 15 minutes. Once the dish is warm, remove it from the oven and transfer the dip into it. This will keep everything from getting cold faster than you can even enjoy it!  Or you can always serve it in a slow cooker.

Creamy Chorizo Cheese Dip

Chorizo Cheese Dip is spicy, cheesy, and the EASIEST dip to make!  Packed with, chorizo, tomatoes, green chiles and lots of cheese! This creamy dip is sure to be a hit while watching the Big Game or anytime you need to satisfy that warm gooey cheese craving.

Ingredients

  • 8-10 ounces Mexican chorizo
  • 1 (10 ounce) can of diced tomatoes with green chilies, drained
  • 4 ounce can chopped green chiles
  • 1 teaspoon minced garlic
  • 1 teaspoon jalapeno pepper, minced (adjust to the amount of spice you prefer)
  • Salt & Pepper
  • 1 (12 ounce) can evaporated milk
  • 8 ounces of Borden® Cheese Finely Shredded Monterey Jack Shreds (or Borden® Cheese Colby & Monterey Jack Shreds)
  • jalapeno pepper, slices and parsley for garnish

Instructions

  1. Brown chorizo in a large non-stick skillet over medium heat until slightly crispy, about 8-10 minutes, making sure to crumble the chorizo as it cooks. Drain excess fat if you have any and transfer to a paper towel-lined plate.
  2. Wipe excess grease from pan. Add diced tomatoes, chopped green chiles, minced garlic, and minced jalapeno pepper to pan. Cook over medium heat, stirring occasionally until heated through (about 2-3 minutes). Salt and pepper to taste.
  3. Reduce heat to low. Gradually whisk in milk. Cook, whisking constantly, until thickened, about 4-5 minutes.
  4. Remove skillet from heat. Gradually stir in most of the chorizo (reserving a tablespoon for topping, if desired). Then begin adding cheese, one handful at a time, stirring until fully melted before adding the next handful.
  5. Place a cast-iron skillet in oven while you pre-heat oven to broil on high with oven rack about 3-inches from the broiler.
  6. Remove hot cast-iron skillet from oven and transfer dip mixture to hot pan . Place into the oven and broil until golden brown, about 2-3 minutes.
  7. Serve immediately with reserved chorizo, a few slices of jalapeno, and fresh cilantro, if desired.

Notes

You can make this from start to finish in an oven-safe skillet. I have better luck cooking everything in my non-stick skillet and I transfer to a cast-iron skillet so it will stay warm longer and looks nice served in the cast-iron.
