Buffalo Chicken Mac ‘n Cheese
Buffalo Chicken Mac ‘n Cheese. A kick of hot sauce and chicken gives a new twist to this old classic, mac ‘n cheese recipe.
simple, home-style food that brings comforting thoughts of home or childhood.
When I hear the words “comfort food” Macaroni and Cheese is one of the first things that comes to mind. It’s an ooey-gooey food that warms you, makes you feel cozy, soothes you when you need it and reminds you of childhood.
What happens when you mix comfort food with man food? It’s a recipe made in heaven. I knew when I first ran across this recipe for Buffalo Chicken Macaroni and Cheese on The Food Network it had my family’s name written all over it (with just a few modifications).

Be forewarned, it does take a little more prep time in the kitchen than I expected and it made enough for an army. So plan accordingly. It’s well worth the time, and if you’re not serving a crowd you could easily make half the recipe.

It’s also a bit on the hot and spicy side, so you might want to adjust the hot sauce and cheese for your family’s taste!

Buffalo Chicken Mac 'n Cheese
A kick hot sauce gives a new twist to this old classic.
- 6 tablespoons butter (divided) salt
- 1 pound elbow macaroni
- 3 cups shredded rotisserie chicken
- 2 cloves garlic, minced
- 3/4 cup hot sauce (divided)
- 2 tablespoons all-purpose flour
- 2 teaspoons dry mustard
- 2 cups milk (I used 2%)
- 1/2 cups heavy cream
- 1 pound yellow sharp cheddar cheese, cut into 1-inch cubes (about 3.5 cups)
- 8 ounces pepper jack cheese, shredded (about 2 cups)
- 2/3 cup sour cream
- 1 cup panko bread crumbs
- 1/2 cup crumbled blue cheese
- 2 tablespoons chopped fresh parsley
- Preheat the oven to 350° F and grease a 9-by-13-inch baking dish.
- Bring a large pot of salted water to a boil; add the pasta and cook until al dente, about 7 minutes. Drain.
- Meanwhile, melt 2 tablespoons butter in a large skillet over medium heat. Stir in the chicken and garlic and cook 2 minutes, then add 1/2 cup hot sauce and simmer until slightly thickened, about 1 more minute.
- Melt 2 tablespoons butter in a saucepan over medium heat. Stir in the flour and mustard with a wooden spoon until smooth. Whisk in the milk and cream, then add the remaining 1/4 cup hot sauce and stir until thick, about 2 minutes. Whisk in the cheddar and pepper jack cheeses, then whisk in the sour cream until smooth.
- Spread half of the macaroni in the prepared baking dish, then top with the chicken mixture and the remaining macaroni. Pour the cheese sauce evenly on top.
- Put the remaining 2 tablespoons butter in a medium microwave-safe bowl and microwave until melted. Stir in the panko, blue cheese and parsley. Sprinkle over the macaroni and bake until bubbly, 30 to 40 minutes. Let rest 10 minutes before serving.

Oh. Em. Gee. This is an astoundingly delicious looking idea!!!! Clipped! <3
WOW! Baked macaroni is one of my favorite comfort foods – and I usually add hot sauce in the aftermath – but your addition earlier makes a ton of sense! This looks fantastic, and I can’t wait to try it!
Mac and cheese has been on my mind lately, this sounds PERFECT!
Looks fantastic! I can’t wait to try it out. Thanks.
Mac-n-cheese actually doesn’t communicate childhood memories or comfort food to me. In fact, Greek and Mediterranean are my comfort food. My sister and I grew up on it!
I could inhale this entire dish. For realz.
I can’t even get over this. WANT!
Cheryl: This is such an amazing fusion of comfort food. I’m sure it’d be a huge crowd pleaser come Super Bowl time!
I love this recipe! I found it on Food Network’s site a few months ago and have been tweaking it ever since. I am pretty sure my boyfriend would eat it every day if I’d let him. We like it extra spicy, but for a milder taste, I’ve subbed the pepper jack cheese for an 8 oz. block of neufchatel (cream cheese works too).
Also before bread crumbs and baking, I divide it into smaller pans and freeze portions for later. Makes for a super easy meal when the buffalo craving hits!
Darn you, now you have me craving mac n’ cheese! There’s nothing better than pasta and warm gooey cheese sauce.
OH. HAI. GET IN MY BELLAH!
This looks AMAZING. If it wasn’t snowing here I’d be off to the grocery store right now to buy the ingredients!
This is some serious game day grub!!!! I love it, Cheryl.
Now this is the way to spice up mac ‘n cheese! I’m thinking this would be perfect for a Superbowl party.
Definitely making this for my super bowl party!
Oh my..that is the perfect comfort food!!!!
I think my son would absolutely flip if I made this. He loves homemade mac and cheese almost as much as he loves hot wings.
What a great idea for a man pleasing meal!
Oh my goodness that looks delicious!
Delish! I need some now.
This sounds perfect! What a great combination.
I love all things Buffalo Chicken! I just recently made a Buffalo Chicken Grilled Cheese Sandwich, and it was outSTANDing!
This is like the most perfect combination of two of my favorites 🙂
My kids have never been mac and cheese fans – i think this will win them over!
Sounds DELISH!!! Thanks for sharing:)
Wow! All of the football loving men in my life will love this!
I’m pretty sure that this recipe would be Brian’s version of absolute bliss. Love this, Cheryl!

I really want to try this but I really can’t do that much spice in one dish. However, I love pepper jack cheese. Do you think it would be okay to only use the hot sauce in the cheese sauce or just on the chicken? I’m a new cook and still scared of venturing that far on my own.
sure!! this is what I would do – because this dish it pretty hot. It will stil be good, but should be much more mild, try this and if you think you can handle more heat the next time, just add a little more back in until it’s just the way you like it.
I would do 1/4 cup of hot sauce with the chicken and either none in the sauce, or just 2-3 Tablespoons.
Enjoy!! let me know how it turns out!!
Thanks! I’ll try it this week and let you know.
