When it comes to the weekend there’s nothing I look forward to more than sipping on mimosas and digging into a breakfast casserole with friends and family. If brunching was a sport, I would be an Olympic gold medalist by now.

I love a good brunch spot, but what most restaurants seriously lack, is a good breakfast bake. I can find all the pancakes, waffles, and french toast my heart desires, but not a breakfast casserole in sight. So that’s why this blueberry breakfast casserole is my go to anytime life calls for an at-home brunch party.

This is a classic recipe for blueberry casserole everyone needs to have in their back pocket for any occasion! Made with packaged cinnamon rolls, it’s a great and easy way to make cinnamon rolls into a fruit casserole that everyone will love.

The brightness of the fresh blueberries and tangy lemon zest pair perfectly with the deliciousness of the cinnamon rolls for a subtly sweet treat that will put you on cloud nine!

In a large bowl, combine cream cheese and powdered sugar with an electric mixer until well incorporated. Using a rubber spatula, gently fold in blueberries, lemon zest, and lemon juice. Then remove cinnamon rolls from the tube, and set icing packet aside.

Cut each cinnamon roll into pieces, stir cinnamon roll pieces into the blueberry mixture and spoon into prepared dish.
Bake until bubbling around the edges and dough is baked through in the center. Lastly, let cool and drizzle with the icing of your choice!

Can I make this casserole ahead of time? 

If you are looking for an easy make-ahead sweet breakfast casserole, this recipe is perfect for you!

To make this casserole the night before just assemble the recipe as directed then cover and refrigerate overnight. Pull it out to sit on the counter about 30 minutes before you want to put it in the oven, to bring it closer to room temperature! Your house will smell FABULOUS!

Ways To Change Up Your Breakfast Casserole

One of my favorite things about this blueberry breakfast casserole is how versatile it is! There are so many ways you can adjust the recipe for just about any need you might have!

Want more fruit? Add raspberries along with the blueberries for a real fruit explosion! You can even use any fruit you want in place of blueberries if you want to as well.

Feeding a crowd? No problem! To double or triple the recipe and put in a 4-quart or 6-quart baking dish. Disposable foil pans would work too if you need to travel with the dish and don’t want to risk losing your favorite casserole dish.

Need to save time? Make everything the night before. Cover the dish and place in refrigerator overnight for super easy prep in the morning. Just wake up throw it in the oven, and dig in!

Secrets for Making this Blueberry Breakfast Casserole Recipe Easy as Pie

Choose your icing: What icing you choose will determine the simplicity and ease of the recipe. IF you’re short on time or need a recipe that requires little baking skills, just use the icing that comes with the cinnamon rolls.

If you have extra time, I highly suggest making the lemon glaze in the recipe. It’s super simple and sooo worth it!

Freeze the leftovers: Try freezing leftovers in individual containers for up to 2 months, that way you can pull one out any time, pop it in the microwave and you have a yummy breakfast or treat!

Cut the dough: When cutting the dough, you want to make sure it’s cut up small enough. Cutting the cinnamon roll dough into sixths helps the dough bake all the way through.

Blueberry Breakfast Casserole

This Blueberry Breakfast Casserole is perfect for brunch, breakfast or dessert! With cinnamon rolls, cream cheese and loaded with juicy blueberries and fresh lemon zest it makes a beautiful presentation.

Ingredients

Blueberry Breakfast Casserole

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 cups fresh blueberries
  • 2 tablespoons grated lemon zest
  • juice of 1/2 a lemon
  • 1 tube (17.5 ounce) refrigerated cinnamon rolls (I used Pillsbury Grands)

Lemon Glaze Icing

  • cream cheese icing (from tube of cinnamon rolls)
  • juice of one lemon
  • zest of one lemon

Instructions

  1. Heat oven to 350° F and spray a 3 quart baking dish with cooking spray.
  2. In a large bowl, combine cream cheese and powdered sugar with an electric mixer until well incorporated. Using a rubber spatula, gently fold in blueberries, lemon zest and lemon juice.
  3. Remove cinnamon rolls from tube, and set icing packet aside. Cut each cinnamon roll into 6 pieces. Stir cinnamon roll pieces into blueberry mixture and spoon into prepared dish.
  4. Bake 34-38 minutes or until bubbling around the edges and dough is baked through in center. Cool for 10 minutes.

For Lemon Glaze Icing

  1. While casserole is cooling prepare lemon glaze. In a small bowl, mix together the reserved cream cheese icing, lemon zest and lemon juice. Drizzle glaze over Blueberry Breakfast Casserole. Serve warm or room temperature.

Notes

  • The breakfast casserole will keep for a few days covered in the refrigerator. Can be re-heated one serving at a time in the microwave.
