- 2-3 medium sweet potatoes (about 1½ pounds)
- 2 tablespoons avocado oil, divided
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1 teaspoon black pepper

- ½ teaspoon garlic powder
- ¼ teaspoon paprika

Instructions
- For the Spicy Mayo: Using a small bowl mix all of the sauce ingredients until combined. Cover and refrigerate until ready to serve.
- Scrub and dry the sweet potatoes and cut the ends off. Then cut the sweet potatoes in half lengthwise and cut them into wedges.
- Toss sweet potato wedges in a bowl with 1 tablespoon avocado oil until fully coated.
- Add the cornstarch, salt, black pepper, onion powder, garlic powder, paprika, and red pepper flakes to the bowl and toss until the sweet potatoes are fully coated. (you can also do this step in a large zip-top plastic bag)
- Oil the bottom of the air fryer with a pastry brush.
- Place the sweet potatoes evenly in the air fryer.
- Use the pastry brush to dab oil onto the sweet potatoes.
- Cook at 400° F for 8 minutes. Flip the wedges over and dab with oil.
- Cook for an additional 7-9 minutes or until the sweet potatoes are tender and crispy.
