Storage

Homemade fudge can be stored at room temperature for 1-2 weeks or 2-3 weeks in the refrigerator. Layer the fudge with waxed paper, and store it in an airtight container, ideally in a cool, dry spot like a cupboard or pantry to prevent melting. Avoid leaving it exposed on the counter.

Freezer

For optimal freshness in the freezer, ensure your fudge is protected from air and moisture. Begin by wrapping it in waxed paper and then layer it with aluminum foil or plastic wrap to create a barrier. Place the wrapped fudge in an airtight container or freezer bag, storing it in the back of the freezer to avoid temperature fluctuations. Properly stored, the fudge will last for 2 to 3 months in the freezer. When ready to indulge, allow the fudge to thaw for two to three hours before enjoying.

Ingredients For White Christmas Fudge

For specific amounts, please refer to the printable recipe card at the bottom of the post.

  • White Baking Chips* – You’ll want a good quality chip with excellent flavor that melts well.
  • Sweetened Condensed Milk – (not evaporated milk) contains the sugar crucial for forming small crystals that cause the peppermint Christmas fudge to set up.
  • Unsalted Butter – Butter should be room temperature and soft to the touch.
  • Peppermint Extract – Use a good-quality extract for pure peppermint flavor.
  • Chopped Walnuts – or your nut of choice, are one of the classic ingredients in rocky road fudge.
  • Mini-Marshmallows – Soft and chewy texture in every bite; a traditional and expected ingredient in any rocky road recipe.
  • Christmas-themed M&Ms And Sprinkles

*Note – Good news for budget shoppers (aren’t we all these days?), according to the Mercury News, Target’s Good & Gather™ White Baking Morsels are “…buttery and tender without the use of cocoa butter…melt better than most and are easily the best inexpensive white chips out there.”

How To Make White Rocky Road Christmas Fudge

Say goodbye to complicated fudge recipes! This white Christmas fudge comes together in just 3 minutes in the microwave. A time-saving must-have for the bustling holiday season.

When you are making this recipe, you’ll want to use the full recipe at the bottom of the page.

  1. Prep: Simply coat an 8×8 pan with baking spray, line it with parchment paper (or aluminum foil), and leave 2-inch overhang handles
  2. Microwave: Microwave white baking chips, sweetened condensed milk, and butter in a glass bowl. Stir in 30-second bursts until melted and smooth (around 2 to 3 minutes).
  3. Stir & Fold: After removing from the microwave, stir in peppermint extract, then add walnuts and miniature marshmallows.
  4. Assembly: Pour and smooth the vanilla rocky road mixture into a prepared pan. Evenly spread remaining marshmallows on top, and add holiday M&Ms and decorative sprinkles.
  5. Chill & Serve: Chill until firm, slice, and serve at room temperature!

*Note: Peppermint Christmas fudge is very rich. I recommend slicing into small, pop-in-your-mouth one-inch squares because the eyes are always bigger than the stomach for decadently rich rocky road Christmas fudge!

White Rocky Road Fudge Notes And Tips

  • A good rule of thumb for any microwave fudge recipe is to coat the sides of your bowl with butter to reduce the chance of forming large sugar crystals that make fudge gritty.
  • Avoid overheating the baking chips, butter, and condensed milk mixture. Stir carefully, and remember that the combination of the hot liquid and bowl will also contribute to the chips melting. Stir often (every 20-30 seconds)!
  • Fudge can dry out and become crumbly if not wrapped properly. As soon as your fudge creation cools, wrap it tightly to keep it soft and fresh.
  • Before you start the 3-minute microwave fudge, arrange the peppermint extract and mix-ins in your work area. Since the process takes less than five minutes, be prepared to work quickly, incorporate the rocky road ingredients, and apply toppings.
  • Avoid making fudge on humid days as the excess moisture in the air can hinder the sugar crystallization process, resulting in a grainy and undesirable texture instead of the smooth and creamy consistency characteristic of well-made fudge.
  • Allow the fudge to chill completely for easier slicing into squares. To make the cutting process easier, use hot water to warm the knife, ensuring smooth clean cuts.

Recipe FAQs

How long will Christmas fudge stay good on the counter?

In the right conditions, fudge can be kept on the counter for 1-2 weeks unless the recipe says to refrigerate. Cold, heat, humidity, light, air, and all the usual culprits can affect the appearance and taste of fudge recipes. Airtight storage and a cool environment are best. My question is, who has the willpower to walk by fudge for two weeks?

Should I store rocky road fudge in the refrigerator?

While you can store fudge in an airtight container in the fridge for up to three weeks, it will dry out faster unless it’s very well wrapped. For optimal results, you should always layer homemade fudge with waxed paper, aluminum foil, or plastic wrap when storing it in the refrigerator.

Can you freeze Christmas Fudge?

Absolutely! Peppermint rocky road fudge freezes great when double-wrapped and stored in an airtight container. You’ll want to keep it in the back of your freezer to avoid the temperature changes in the front and with items on the door.

What is the difference between white chocolate chips and white baking chips?

The main difference between white chocolate and white baking chips is their cocoa butter content. White chocolate chips contain cocoa butter, sugar, and milk solids for an authentic white chocolate flavor. In contrast, white baking chips have little or no cocoa butter. They are often made with vegetable oil for a smoother melting texture.

Peppermint Christmas Fudge Variations

  • Don’t love a strong mint flavor? Use vanilla extract in the fudge. You could also use peppermint M&M candies. Or experiment with orange, almond, or even banana extracts.
  • While peanuts are the traditional nut for most rocky road recipes, it is a matter of taste. You’ll find alternatives like pecans, pistachios, almonds, and macadamia nuts that are also great in a white chocolate fudge recipe.
  • So, if you’ve read through this white rocky road peppermint Christmas fudge recipe, you are almost certainly looking for a white chocolate or vanilla-based fudge. However, I would be remiss if I didn’t let you in on the 3-minute microwave fudge secret…you can substitute in chocolate chips or any flavor baking chip you’d like!
