Frosted Dreams…..Winter Cupcakes

I’ve had fantasies of skating in a beautiful out door rink, background music plays, snow gently falls and I feel the icy cold wind blowing on my face while I hear the criss cross sound of blades hitting ice. We finish chilled to the bone, stop for hot cocoa by a fire and sitting there are the most gorgeous cupcakes!
That’s right……cupcakes! Ever since Kristan shared her incredibly cute snowman cupcakes I haven’t been able to get them off my mind.
Here in St. Louis, we’ve had lots of cold and very little snow. So I thought if I was making snowman cupcakes, why not a few snowballs too!
How to make Snowball Cupcakes
Perfect Cupcakes using a mix (I used Duncan Hines Moist Deluxe French Vanilla)
- I added Americolor Bright White Soft Gel Paste to the butter cream to get a nice white frosting.
- Next I pipped a lot of frosting on top of the cupcake
- Using my offset spatula I shaped the pile of frosting into a round dome shape as smooth as I could (doesn’t have to be perfect…..when have you ever seen a perfect snowball)
- Pour White Sanding Sugar in Shallow bowl or plate
- Roll cupcake in Sanding Sugar
- place in cute Wilton Cupcake cup
AND………..because I was really feeling frosty……….

My family, namely my husband, LOVED the snowman hats SO much, he’s requested that I make an extra batch of just hats next time! lol………..I never even got to eat one, so I wouldn’t know how good they were, but let’s just say, oreos and marshmallows covered in chocolate……..I think I understand!

We’ve actually been “snowed in” for the last two days here in Louisiana, so I made snowflake cut out cookies and decorated them with royal icing. Each cookie is different just like each snowflake is not the same. I was disappointed in how the color blue turned out ( I was hoping for more of a ‘snowy blue’, but I think I used to much paste) but other than that, I enjoyed my baking project! Stay warm!!
Your snowballs and your snowmen cupcakes are sweet. What is it about snowmen that make you want to just hug them…even if they are edible and we pop them in our mouths without a second thought? I suppose it’s better than the other option for some….melting!
