Smash Burger Tacos are juicy, crispy, cheesy, and loaded with fresh toppings—an easy weeknight dinner everyone will love.

If taco night and burger night had a baby, this would be it… and honestly, it might be better than both.

What Are Smash Burgers?

Smash burgers are made by pressing a ball of ground beef onto a hot skillet or griddle, creating a thin patty with crispy, caramelized edges and a juicy center.

That quick “smash” locks in flavor and creates those irresistible crispy bits everyone loves.

For smash burger tacos, the beef is pressed directly onto the tortilla, so you get all that crispy, beefy goodness in every bite—no bun needed.

TidyMom says: this is why smash burgers taste so good.

Why you’ll want these on repeat

  • Crispy edges + juicy centers (thanks to the smash method)
  • Ready fast—perfect for weeknights
  • Big burger flavor without the bun
  • Totally customizable with your favorite toppings
  • Fun, handheld, slightly messy in the best way

TidyMom says: the crispy tortilla + burger combo is the real magic here.

Ingredients for smash burger tacos including ground beef, tortillas, and toppings

TidyMom says: smash it thin….crispy edges are where the flavor lives.

Little tips that make a BIG difference

  • Use a hot skillet (cast iron = 🔥 results)
  • Smash thin for max crisp + flavor
  • Don’t overcrowd the pan, work in batches
  • Toast the tortilla lightly while cooking for extra texture

TidyMom says: a little char on the tortilla = don’t skip it!

Easy swaps + ways to change it up

  • Swap beef for ground turkey or chicken
  • Add bacon (because obviously)
  • Try pepper jack or cheddar instead of American
  • Add jalapeños for a spicy kick
  • Skip the tortilla and use low-carb wraps
  • Serve them on a big tray and let everyone grab their own, it’s half the fun.

Smash Burger Tacos

Yield: 8 tacos
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Smash Burger Tacos combine juicy, crispy-edged beef with melty cheese and fresh toppings, all tucked inside a toasted tortilla for the ultimate quick and crave-worthy meal.

Ingredients

  • For the burger sauce:
  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 2 Tablespoons yellow mustard
  • 1 Tablespoon sweet pickle relish
  • For the tacos:
  • 1-2 Tablespoons neutral oil
  • 1 pound 80/20 ground beef, rolled into 2 ounce balls
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 8 (6-inch) flour tortillas
  • 8 slices American cheese
  • Optional toppings:
  • Shredded lettuce
  • Sliced pickles
  • Diced tomatoes
  • Diced onions

Instructions

  1. Turn on your flat top grill or cast iron pan to medium high heat and add a thin layer of neutral oil to the surface.
  2. Combine all of the ingredients for the burger sauce in a bowl and stir or whisk together until well combined before setting aside in the refrigerator.
  3. In a small bowl, mix together the salt, pepper, and garlic powder.
  4. Sprinkle the seasoning mixture over all sides of the burger balls.
  5. Place the meatballs onto your grill and top with a tortilla.
  6. Use a large metal spatula (or a burger press) to smash the tortilla and meatball down so it’s as thin as you can make it and cook for about 2 minutes undisturbed.
  7. Flip the tacos and top them with American cheese. Close the lid (or cover with a lid if making this in a pan) and let the cheese melt.
  8. Remove to a clean plate or baking tray and top with shredded lettuce, pickles, diced tomatoes, and onions, followed by a drizzle of the burger sauce, and serve warm.

Notes

  • Smash the beef very thin for best texture and flavor

  • Assemble tacos just before serving to avoid soggy tortillas
  • Sauce can be made ahead and stored in the fridge

    Storage:
Store leftover meat separately from toppings in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet for best texture, then assemble tacos fresh.
Optional (if you want to include freezing too)
  • Freezing:
Cooked smash burger meat can be frozen for up to 2 months. Thaw in the refrigerator and reheat in a skillet before serving. Assemble tacos fresh.
