I’m going to interrupt this summer heat wave with a quick frozen treat, that is not only simple to make but substantially better for you than most frozen treats you can buy at the store.

I’ve been on a bit of a baking freeze (pun intended)……..and ever since I discovered Wilton Peanut Butter Candy Melts, I’ve been dreaming up different ways to use them.  They were great when I covered brownies with them, so I thought, why not frozen bananas covered in peanut butter candy!

After all, who doesn’t love bananas and peanut butter, with a little chocolate?

I’ve always loved frozen bananas, did you know you can smash and freeze bananas for a 1 ingredient ice cream?!

Frozen bananas are the perfect snack and can easily turn into a simple dessert. If you like portion control as I do, those bites are your new best friends!

Just a word of caution… These frozen banana bites are highly addictive. You probably won’t be able to eat just one or two 😉

TIPS FOR MAKE FROZEN PEANUT BUTTER BANANA BITES

Use a firm ripe banana, but not too ripe.  A banana with a nice yellow skin, without any brown or green, will work best for these frozen banana bites. If the bananas are too green they will be tasteless and fully ripped bananas are too mushy and difficult to work with.

Dip the banana pieces in the melted peanut butter candy melts. Lay them out on a half sheet pan lined with a parchment sheet or wax paper, leaving some space between them. Once all of the banana bites are covered, use a spoon to drizzle melted chocolate over the tops.

Transfer to the freezer for at least an hour until hardened. Then transfer to an airtight container and freeze overnight.

Let them sit out at room temperature about 5 minutes before serving, so they are easier to bite into.

Can You Use Real Peanut Butter?

If you can’t find the peanut butter candy melts, you have 2 options:

You can mix about 1/2 cup creamy peanut butter with 1/2 cup chocolate chips in medium microwave-safe bowl and microwave on HIGH 1  minute. Stir until smooth. Dip each bite into chocolate peanut butter, coating completely.  Then use remaining chocolate peanut butter to drizzle on top with a spoon.

OR, you can line a half sheet baking pan with wax paper. Spread 1 teaspoon of creamy peanut butter on half of the banana slices. Top with remaining banana slices and dip in melted chocolate.

Frozen Peanut Butter Banana Bites

Ingredients

  • 3 firm bananas (not too ripe)
  • 1 bag Peanut Butter Candy Melts
  •  1-2 tsp shortening
  •  2/3 cup Chocolate Chips

Instructions

  1. Line baking sheet pan with parchment paper or wax paper.
  2. Cut bananas into 1-inch sections.
  3. In a medium bowl, melt peanut butter candy melts with a little shortening according to directions on the bag.
  4. Using a fork dip bananas in melted candy and place on lined pan.
  5. Melt chocolate chips in microwave on HIGH 1 minute. Stir until smooth. Then using a spoon, drizzle chocolate over banana bites.
  6. Transfer to the freezer for at least an hour until hardened. Then transfer to an airtight container and freeze overnight.
  7. Let them sit out at room temperature about 5 minutes before serving, so they are easier to bite into.

Notes

I got about 24 bites out of 3 bananas. If they are frozen solid, you will want to let them sit out for about 5 minutes before trying to bite into one. If you can't find the peanut butter candy melts, you have 2 options:

  • You can mix about 1/2 cup creamy peanut butter with 1/2 cup chocolate chips in medium microwave-safe bowl and microwave on HIGH 1  minute. Stir until smooth. Dip each bite into chocolate peanut butter, coating completely.  Then use remaining chocolate peanut butter to drizzle on top with a spoon.
