What Are Smash Burgers?
Smash burgers are made by pressing a ball of ground beef onto a hot skillet or griddle, creating a thin patty with crispy, caramelized edges and a juicy center.
That quick “smash” locks in flavor and creates those irresistible crispy bits everyone loves.
For smash burger tacos, the beef is pressed directly onto the tortilla, so you get all that crispy, beefy goodness in every bite—no bun needed.
TidyMom says: this is why smash burgers taste so good.
Why you’ll want these on repeat
- Crispy edges + juicy centers (thanks to the smash method)
- Ready fast—perfect for weeknights
- Big burger flavor without the bun
- Totally customizable with your favorite toppings
- Fun, handheld, slightly messy in the best way
TidyMom says: the crispy tortilla + burger combo is the real magic here.

- ½ cup mayonnaise
- ¼ cup ketchup
- 2 Tablespoons yellow mustard
- 1 Tablespoon sweet pickle relish
- For the tacos:
- 1-2 Tablespoons neutral oil
- 1 pound 80/20 ground beef, rolled into 2 ounce balls
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- 8 (6-inch) flour tortillas
- 8 slices American cheese
- Optional toppings:
- Shredded lettuce
- Sliced pickles
- Diced tomatoes

Instructions
- Turn on your flat top grill or cast iron pan to medium high heat and add a thin layer of neutral oil to the surface.
- Combine all of the ingredients for the burger sauce in a bowl and stir or whisk together until well combined before setting aside in the refrigerator.
- In a small bowl, mix together the salt, pepper, and garlic powder.
- Sprinkle the seasoning mixture over all sides of the burger balls.
- Place the meatballs onto your grill and top with a tortilla.
- Use a large metal spatula (or a burger press) to smash the tortilla and meatball down so it’s as thin as you can make it and cook for about 2 minutes undisturbed.
- Flip the tacos and top them with American cheese. Close the lid (or cover with a lid if making this in a pan) and let the cheese melt.
- Remove to a clean plate or baking tray and top with shredded lettuce, pickles, diced tomatoes, and onions, followed by a drizzle of the burger sauce, and serve warm.
