Cake Mix Cookies

I have been soooo busy the last two weeks working on my blog move and re-design my family gently reminded me that I had not baked any yummy treats in a while…….so I need to come up with something simple that I knew they would love!

Since I was working on a lot of my old posts, I had come across a recipe I had posted a long time ago for Cake Mix Cookies.  They were a huge hit back then, but for some reason we had not made them since.  (I think some of it has to do with having a blog….and always wanting to make something new, so I can blog about it! lol)

So we made the cookies, and I took new pictures…….just so I can rave about these cookies again!

They’re SO easy, require few ingredients AND really are……a fantastic cookie, if you like soft cookies!

We like them with the Pillsbury Funfetti Cake Mix and frosting, but you can make them in any flavor you like!

Easy Cake Mix Cookies

Easy Cake Mix Cookies

Ingredients

  • 1 cake mix (any flavor)
  • 2 eggs
  • oil (use the amount that is called for on the cake box)
  • 1 can frosting (any flavor)

Instructions

  1. Heat oven to 375°
  2. In a large bowl, combine cake mix, eggs and oil until well blended.
  3. shape dough into 1? balls and place on cookie sheet.
  4. Flatten each ball with the bottom of a glass dipped in powdered sugar
  5. Bake at 375° for 8-9 mins.
  6. Cool and remove from cookie sheet
  7. Spread frosting over warm or cooled cookies.

    I know what you mean about not baking something you already blogged!! Sometimes my family just wants some plain brownies or chocolate chip cookies, and here I am making all this crazy stuff!! I have to remind myself sometimes to bake them things they love.

    Oh Yum. I haven’t tried the funfetti ones yet. They look great, especially with frosting! I’ve always made them with the betty crocker devil’s food cake and mixed in mini chocolate chips. Great for a quick and easy chocolate fix or good enough to take to a party, too!

    I try to keep a few of these cake mixes around for when my daughters have friends over. they think they are making homemade cookies and I know I have all the ingredients

    oh man! I LOVE these cookies!!!!! and I like mixing it up with different cake mix and mix-ins! YUM!

    I never made these, I’ve heard they are great though. And I agree, I tend to bake something once, we love it, and then I keep baking new things and forget about the others.
    Maybe I need to make a favorites folder :-)

    I love cake box cookies. I end up making the red velvet cake box cookies most often, they are my son’t favorite, I even shape them into hearts from a circle and send some extra love in his lunch box!
    Thanks for reminding me just how easy they are, we’ve been up to our ears in cupcakes lately so this would be a great way to switch it up.

    I make a cake mix cookie that is a little different. My recipe calls for 1 box of cake mix, 1 egg, and 1- 8 oz. container of Cool Whip. After you’ve stirred all that together, you roll into little balls and then roll the balls in powdered sugar and then bake them at 350. They are so good and served at a lot of bridal and baby showers around my neck of the woods. The lemon ones are my favorite! I’ve seen them made with orange, lemon, & strawberry cake mixes).

    These are in the oven as we speak, and from my kids’ experience, it doesn’t happen often that there is baking going on! These were so easy, I think I’ll be buying cake mixes more often. Since my youngest is allergic to peanuts, this is a simple way to make lots of different cookies without worrying about substituting ingredients and such. If you ever find a way to make peanut-butter cookies without peanut butter, let me know!
