Love the Pie Party & GIVEAWAYS

I’ve been busy… really REALLY busy. Did I mention how busy I’ve been? Over the span of the last few weeks, we’ve had an injured finger that’s has required a month of physical therapy, days later the hubby fell and broke a finger, not to mention the flu hit our household! {I’ve been spared so far!}…..but I digress. This is about PIES and GIVEAWAYS!!!

*WARNING – this is going to be a LONG post!!………LOTS of info and goodies!!*

My life as a mom is usually busy, as most are, and Pillsbury makes my life SO much easier with their refrigerated pie crust! I’ve used it for years! No, they’re not paying me to write this (although they are sponsoring a giveaway……but more on that in a minute). If you read many of my recipe posts, you know I like easy….that’s why I love the Pillsbury refrigerated pie crust. No mixing, no rolling…..well you do have to UNroll the pie crust from the packing, but you can do that with your hands, no rolling pin needed! You just place the crust in your pie plate and following the easy instructions on the box according to what kind of pie you are making!! It’s THAT easy! and the BEST part……it tastes like home made!! {I won’t tell, if you won’t tell!}

In honor of Thanksgiving, I’m going to share my favorite Pumpkin Pie recipe!
This is not your ordinary pumpkin pie, this is heaven in the form of a fluffy, soft, scrumptious, cold creamy pumpkin pie !

Layered Walnut Pumpkin Pie

Layered Walnut Pumpkin Pie

Ingredients

  • 1 Cup Walnuts
  • 2 Pie Shells
  • 1 envelope Unflavored Gelatin
  • 1/4 Cup cold Water
  • 1 30 oz can Pumpkin Pie Mix (not solid pumpkin)
  • 2 T Sugar
  • 1 small can Evaporated Milk
  • 3 Eggs *(you will use 2 yolks, and 3 whites)
  • 1/2 tsp Vanilla
  • 1 container of Cool Whip

Instructions

  1. Chop walnuts fine.
  2. Bake pie shells and cool.(I use the Pillsbury Refrigerator Pie Crust)
  3. Filling
  4. Soften gelatin in water in sauce pan.
  5. Stir in Pumpkin Pie Mix, 2 egg yolks and milk.
  6. Heat until boiling. Stir constantly.
  7. Reduce to low heat stirring constantly for another 5 mins.
  8. Remove from heat, add vanilla and cool and chill until thick. (I usually do up to this point the night before, and refrigerate the filling and egg whites overnight- but I would think a few hours would be fine if you want to do it the same day)
  9. Beat 3 egg whites to soft peaks adding 2 Tablespoons of sugar one at a time until still.
  10. Fold into pumpkin mix.
  11. Fold in 3/4 of your walnuts.
  12. Layer
  13. 1/2 of your pumpkin filling into the 2 pie crusts, 1/2 of Cool Whip on top of filling in each crust and spread with spatula, remaining 1/2 of pumpkin filling in each crust, spread with spatula. Dollop several spoonfuls of remaining Cool Whip on top of each pie, then take a knife and swirl them slightly into the filling.
  14. Sprinkle with remaining Walnuts.
  15. Chill until ready to serve.

    Derby Pie

    1¼ hours | 15 min prep
    1 9 in pie
    1 cup sugar
    1/2 cup self rising flour
    1 cup walnuts or pecans, chopped
    2 eggs, slightly beaten
    1/2 cup butter, melted and cooled
    10 ounces semi-sweet chocolate chips
    1 teaspoon vanilla
    9 inches graham cracker crust
    Preheat oven to 325.
    Mix sugar and flour in a large bowl. Set aside.
    Add the nuts, eggs, butter and chocolate chips and vanilla to the sugar/flour mixture and mix together.
    Pour into the pie crust.
    Bake for 1 hour.
    Cool Completely.
    **Variations:.
    Use mint chips instead of chocolate chips.
    use 2 tsp of rum or bourbon instead of vanilla

    25 buttery round crackers

    Preheat oven to 450 degrees F (225 degrees C).
    Roll out pastry and set aside. Bring water to a boil in a large saucepan.
    In a small bowl mix together sugar and cream of tartar. Add mixture to boiling water. Stir, then add crackers, one at a time. Boil for 3 minutes, but do not stir.
    Pour cracker mixture into pastry-lined pie pan. Sprinkle crackers with cinnamon and dot with butter or margarine. Cover with top pastry. Seal edges and cut steam vents in top.
    Bake in preheated oven for 30 minutes, until crust is golden brown. May need to cover top pastry partway through baking to prevent overbrowning.
