Ingredients

Steak

  • 8 ounces sirloin steak , cut into bite-size cubes
  • 2 tablespoons avocado oil , divided
  • 1 teaspoon garlic powder
  • juice of 2 limes
  • ½ teaspoon honey
  • 1 teaspoon coarse kosher salt
  • ½ teaspoon dried oregano
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon chili powder

Black Bean Corn Salad

  • 15 ounces black beans, drained and rinsed
  • 1 cup corn , thawed if frozen
  • ½ cup diced tomatoes
  • ¼ cup red onion, diced
  • ¼–½ cup chopped cilantro
  • 1–2 garlic cloves, minced
  • ½ teaspoon honey
  • juice of ½ lime
  • ¼ teaspoon coarse kosher salt
  • ¼ teaspoon black pepper

Creamy Southwest Sauce

  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1–2 tablespoons chipotle peppers in adobo sauce , finely chopped
  • 1 tablespoon lime juice
  • 1–2 garlic cloves, minced
  • 1 teaspoon honey
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon coarse kosher salt

Instructions

  1. In a large bowl, combine the cubed steak, 1 tablespoon avocado oil, lime juice, honey, garlic powder, coarse kosher salt, oregano, black pepper, onion powder, cumin, and chili powder. Toss to coat evenly. Cover and refrigerate for up to 8 hours, if desired.
  2. Meanwhile, combine the Black Bean Corn Salad ingredients in a medium bowl and toss until well combined. Taste and season with additional salt and pepper, if needed.
  3. In a small bowl, stir together the Southwest Sauce ingredients until smooth. Refrigerate until ready to serve. Taste and season with additional salt, if needed.
  4. Heat the remaining 1 tablespoon avocado oil in a large skillet over medium heat. Add the marinated steak in a single layer and cook for about 3 minutes. Stir and continue cooking for another 2–3 minutes, or until the steak reaches your desired doneness.
  5. Divide the cooked rice among serving bowls. Top with the steak, Black Bean Corn Salad, and Southwest Sauce. Garnish with avocado, cotija cheese, cilantro, and a squeeze of fresh lime juice, if desired.
