Banana bread!
Tahitian vanilla bean pastry cream for homemade napoleons! Drizzled with vanilla caramel sauce!
It is a cheesecake with a little Asian twist. It is gluten free cheesecake. You can use any toppings as desire, such as strawberry, blueberry, etc. You also can change mochi to different colors to match with your topping or events.
Ingredients for mochi (makes 24 mini cheesecakes):
· 1 ½ cup Mochiko (glutinous rice flour)
· 1 cup sugar
· ½ tsp. baking powder
· 1 cup milk
· 2 eggs
· 4 Tbsp. butter, melted
· 1 tsp. vanilla extract and 2 drop of red food color (turn light pink)
Line 24 foil cupcake liners in muffin pans. Preheat oven to 350 degrees F. put a bowl of water on the bottom rack in the oven to keep moist.
Mix mochiko, sugar and baking powder in a medium bowl. Add milk and eggs, mix well. Then add melted butter, red food color and vanilla, mix well.
Evenly divide mixture and pour into 24 lined muffin cups. Bake for 10 minutes.
Meanwhile, make cheesecake mixture as following:
· 2 (8 oz.) packages cream cheese
· ½ cup sugar
· 2 eggs
· 1 tsp. vanilla
· 1 tsp. lemon juice
With a hand mixer, beat cream cheese and sugar, then add one egg at a time. Add vanilla and lemon juice. Blend well. Then, evenly divide into 24 muffin cups with cooked mochi on the bottoms.
Bake 20 minutes. Cool in the refrigerator for a couple of hours or overnight until set. Then top with your favorite topping before serving.

I love Beanilla! My favorite recipe with my homemade vanilla is: 12 oz. Coca Cola + 2 oz homemade vanilla extract with beans from Beanilla!!! Great evening treat.
Chocolate chip cookies. Tried and true but must use butter and good vanilla. No margarines or pretend vanilla.
My two favorites isn’t baking but family favorites . First is French Toast, a good dash of vanilla and some cinnamon are absolutely necessary. My second is my Christmas candies – peanut brittle and caramels.

Vanilla Bean Cheesecake! It’s a new recipe for me, but so far the best!
Here is the recipe I love to bake. I use the Madagasgar vanilla exrtract.
Apple Cinnamon Loaf
1/3 cup brown sugar (not packed)
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
1 apple, peeled and chopped
Preheat oven to 350 degrees. Grease and flour a 9 x 5-inch loaf pan. Mix brown sugar and cinnamon together in a bowl and set aside. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract.
Combine flour and baking powder together in another bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan. Next add half the apples and half the brown sugar cinnamon mixture. Lightly pat apple mixture into batter.
Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon.
Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes.

I LOVE making French vanilla macaroons, they taste amazing when you add in a little vanilla paste. Since discovering my love for cooking I always love to find recipes with vanilla or saffron, anything to fill my kitchen up with wonderful aromas. Always puts me in such a great mood! 🙂
