I got an earlier start making some vanilla extract for the holidays this year. This is my first time making it, so it has been quite an adventure. I find I prefer the Tahitian over Madagascar beans. And I used bacardi rum as opposed to vodka. I find the alchohol content is extremely strong, but could that have been casued by letting it steep for more than 8 weeks.. like 3 months (oops!)… 🙂
