How are you doing with your holiday shopping? I feel like this is the first year that I’m so unprepared.
I’m not one to procrastinate, but for some reason, I just can’t get into it. Maybe it’s because Allison and I are going on a cruise in mid-January!! We’ll be spending a week in January, in the warm Caribbean sun, camera in hand on the Click Blogger Retreat!
So my thought’s have been a little preoccupied with summer clothes, and how I’m going to look in a swimsuit in January……not to mention it will be our first time cruising and first time out of the country.
Click is a photography retreat where 50 bloggers will explore photography, food, social media, sandy beaches, and deep blue seas aboard Royal Caribbean’s Oasis of the Seas, an 18-deck city on the sea. To say we are excited is an understatement!
I’ve been trying really hard not to overindulge in all the holiday goodness out there, but after all, the holidays are a time to celebrate and enjoy! right? and I’ve heard calories don’t count during the holidays either 😉
So today I bring you eggnog truffles. Oh yes. They taste like creamy delicious eggnog.
People seem to either love or hate eggnog. For me, I’m not a fan of drinking eggnog, but I love anything eggnog flavored! It’s basically a spiced vanilla flavor- what’s not to love?
And how pretty they look on a tray in silver or gold foil cups. Like most truffle recipes, they are easy to make, just need a little patience while you wait for the different steps to set up!

How To Make Eggnog Truffles in Chocolate Cups
These eggnog truffles don’t require any chocolate dipping like most truffle recipes. Instead, you will “paint” a foil candy liner with melted chocolate to make a fun chocolate cup for the eggnog truffles.
After the chocolate cups set up, you fill them with the eggnog truffles filling and you’re all set. I used a small cookie scoop, but as I was filling the cups, it occurred to me they would look really pretty if I had filled a pastry bag (or large Ziploc bag) with the eggnog truffles filling, and piped it into the cups using a 1M tip for a pretty little swirl — but obviously, either way, they taste amazing, and look elegant and festive

Eggnog Truffle Cups
Enjoy the sinful decadence of eggnog one bite at a time with these easy Eggnog Truffles in Chocolate Cups.
Ingredients
- 6 ounces semisweet chocolate, cut into pieces
- 6 tablespoons dairy eggnog (do not use canned)
- 1/2 teaspoon rum extract
- 11 ounces white vanilla candy melts
- 3/4 teaspoon nutmeg
Instructions
- Melt chocolate in small saucepan over low heat, or in microwave: stopping at 30 second intervals to stir until melted.
- Using a small brush (I used a new, clean paint brush), coat inside of 30- 1-inch foil candy cups with a tick layer of melted chocolate. Refrigerate 15-30 minutes until set.
- Heat eggnog in small saucepan over low heat just until eggnog comes to a simmer. Remove from heat. Add rum extract and vanilla chips, stir until melted. Refrigerate about 30 minutes or until mixture begins to firm up.
- Spoon or pipe* about 1 teaspoon eggnog filling evenly into each chocolate cup. Refrigerate or freeze until ready to serve.
- Sprinkle nutmeg over filling in cups. If desired, peel foil cups from truffles before serving.
- Keep refrigerated until ready to serve. Store Eggnog Truffle Cups in an airtight container in the refrigerator.
Notes
- *NOTE: after I finished making these, it occurred to me that I could have piped the eggnog filling into the cups for a prettier look. If you want to do this, put the filling in a disposable pastry bag with a 1M tip and pipe filling into cups.
