Your mother was right! Breakfast really is the most important meal of the day. Not only does it give you the energy to start a new day, but a nutritious breakfast improves your mental focus and prevents you from bottoming out and becoming hungry before lunch.
Did you know that kids who eat a nutritious breakfast, complete with dairy, learn better?! That’s right, not only does dairy provide calcium that helps grow strong bones, but it’s packed with protein. Dairy in any form, whether it’s low-fat milk with cereal, cottage cheese cups, smoothies, or an egg and cheese sandwich, all pack a lot of protein – which helps keep you full until your next meal.
March is National Nutrition Month, which is a good time to start healthy eating habits, such as eating breakfast on a regular basis. Eating breakfast is going to get rid of hunger symptoms, such as being tired, getting headaches or becoming cranky. Set a good example for your kids, by eating a healthy breakfast yourself.
Don’t think you have time to eat breakfast? Here are a few grab-and-go breakfast options that will keep you full, focused and on time:
- cottage cheese and yogurt cups with fresh fruit
- Southwest Baked Egg Cups (baked ahead of time, simply reheat in the morning)
- A veggie omelet with cheese and a slice of whole-wheat toast
- A whole-wheat English muffin with low-fat cheese, a scrambled egg, and a slice of tomato
- Smoothie made with fruit and low-fat yogurt
- Whole-grain cereal with fresh fruit and low-fat milk
- Creme Brulee Baked Oatmeal (recipe below) with low-fat milk, and 4 ounces of orange juice
Oatmeal can be quite boring, particularly when it is drowned and soupy in a bowl. I was never a fan of oatmeal as a kid unless it was in a cookie. It wasn’t until I discovered baked oatmeal a few years ago, when I made Baked Peanut Butter Oatmeal, that it started making a regular appearance on our breakfast table.
I recently wanted to see if I could create a baked oatmeal that would be reminiscent of creme brulee topped off with a sugary crust. Not only is this Creme Brulee Baked Oatmeal delicious right out of the oven, but we even like it cold, or leftover and heated up in the microwave for a quick nutritious breakfast during the week.

Creme Brulee Baked Oatmeal
This Creme Brulee Baked Oatmeal is a creamy, yet firm oatmeal with a finishing sugary crunch that will make you forget that you’re eating something nutritious! Warm or cold, it's perfect with a drizzle of milk making its way into all of the crevices.
Ingredients
- 2 cups old-fashioned oats
- 2 tablespoons butter, melted
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2-1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1½ cups milk
- 1 cup low-fat vanilla yogurt
- 2 whole large eggs
- 2/3 cup brown sugar, divided (1/3 cup for topping)
Instructions
- Preheat oven to 350° and grease a 9-inch pan.
- Using a large bowl, mix all ingredients, reserving 1/3 cup of brown sugar for topping.
- Cover pan with foil, and bake for 20 minutes, remove foil and continue baking for another 25 minutes.
- Remove pan from oven and turn oven to broil. Sprinkle top of oatmeal with remaining 1/3 cup of brown sugar and return to oven to broil 3-5 minutes, watching closely so it doesn't burn.
- Enjoy served warm with a little milk.
- Store leftovers covered in the refrigerator. Reheat in microwave for 30-40 seconds per serving.

Yes, breakfast is so important. I start my day with a bowl of whole oats and a 1/2 grapefruit. This baked oatmeal is going to be a wonderful addition to our big Sunday breakfasts’.

I was originally going to pour a little syrup over the oatmeal, but it was sweet enough with out it. But you could certainly substitute in the recipe too!

I need to make this for spring break breakfast this week. My older kids always shirk oatmeal, while the younger two gobble it down. I think they’d all agree on this one, though.

Any thoughts about substituting steel cut oats for the old fashioned version? Want to try this but my old fashioned oats seem to have disappeared. Will try with the steel cut and let you know how it turns out.

Amazing looking recipe! Quick question- have you ever tried making this with greek yogurt, or with almond or coconut milk instead- I rarely keep regular milk in the house, but always have coconut and almond milk handy. Why post all these people who have not even tried fixing the recipe? I only care to read reviews of people who can give an opinion on how they or family liked or disliked the recipe, if they added ingredients or substituted ingredients that they felt worked better in the dish. Who cares what people think with not even fixing it?
Because I run a blog not a recipe site. They are supporting my work, the time I took to write the post and develop the recipe and share it with others.
So, in answer to your question I care what they think. – the comments are a place where you can leave a message to the author, not necessarily for other readers to get reviews.
I would love to try this with soaked oats. They are so much easier on digestion and it eliminates the phytates.
Looks like it’s been awhile, but was wondering if anyone has tried freezing these in bar or cupcake form?

Do you know what the nutritional information is for this recipe? I am particularly knowing how many grams of protein your version of it contains. I made this with steel cut oats, greek yogurt and Fairlife ultra filtered milk. It is really delicious.

I made this this morning since my daughter loves oatmeal. Instead of just cinnamon I made a chai type spice blend with cardamom, cinnamon, allspice, ginger, and cloves. I also used a honey vanilla greek yogurt. It turned out delicious! Thank you for the recipe!

yes, it’s somewhat cake like, but will crumble some with milk
This was really good though I used Almond Milk and Greek yogurt as substitutes and 1 1/2 tsp of cinnamon.
I absolutely LOVE this recipe. And this is coming from someone who DESPISES oatmeal. *shudders*.. My boss came to work one day with some of this for her lunch and she let me try and I fell in LOVE! I used to make this recipe religiously. It’s seriously so simple but so delicious. I actually eat mine cold with some vanilla yogurt ontop. It’s sooo good. Because I was doing low carb, I hadn’t made it for a while but I’m back today to make it again! All this cold weather has me craving it like crazy! One thing I *do* remember when making it before is that I had to cook it longer than instructed but that is probably based on preference and probably based on my oven. Just thought I’d throw it out there incase anyone wants theirs a little more firm (almost like an oatmeal bar or cake – at least when eaten cold). This recipe is a keeper for sure!! 5 stars
