Cinnamon Roll Baked Oatmeal
Baked oatmeal is by far one of my favorite breakfast recipes to make! I’m pretty sure I could eat it every day if I could, which is why I always find any excuse to make a new baked oatmeal flavor.
Of all the amazing baked oatmeals I’ve tried throughout the years, I have to say, this cinnamon baked oatmeal is my new favorite! The soft and moist texture is like that of bread pudding that’s made with oats instead of bread.
With the decadent cinnamon drizzle and vanilla glaze you’ll feel like you’re treating yourself to dessert for breakfast, but without all of the guilt! What more could you ask for in a breakfast recipe?!
Is Baked Oatmeal Healthy?
There’s a lot of controversy on whether or not oatmeal actually makes for a nutritious breakfast. The reality is that the sugar-filled instant oatmeal packs, probably aren’t going to keep you full until lunch or get you all the nutrients you need. That doesn’t mean that’s the case for all oatmeals though. Making your own oatmeal from home means you can control how healthy your oatmeal comes out.
When you use whole ingredients and don’t go overboard with the add-ins and toppings it can be an amazing breakfast option. This cinnamon roll baked oatmeal does use regular sugar, but if you want to save some calories, you can always swap it out for a natural or o calorie sweetener.
How To Make Cinnamon Roll Baked Oatmeal

Making this cinnamon roll baked oatmeal is as simple as can be, and is SO worth the little bit of extra prep in the morning to make a batch. Once you find out how delicious and easy this recipe is, you’ll never go for the pre-packaged microwave oatmeal again.
Start by preheating the oven, then grease the baking dish or pie plate. Then, using a large bowl, mix all of the oatmeal ingredients until well combined and set aside to allow the mixture to thicken slightly. Next, transfer oatmeal to the prepared baking dish and bake in the oven until slightly brown on top.
While the oatmeal bakes, prepare the cinnamon topping by mixing the butter, brown sugar and cinnamon in a small bowl until well combined. In another small bowl mix the powdered sugar, cream and vanilla for the glaze. Allow baked oatmeal to cool before adding cinnamon drizzle and vanilla glaze to the top. Enjoy warm, with or without a little milk.
To add drizzle and glaze to the top of the oatmeal you can use a spoon, a pastry bag or ziptop plastic bag with the corner snipped off. If the cinnamon drizzle seems too runny, you can chill it in the refrigerator for a few minutes. If the glaze is too thin, add more powdered sugar – if it’s too thick add a little more cream.
Tips For Making The Best Cinnamon Roll Baked Oatmeal
- Be sure to use rolled or old-fashioned oats for the best results when making this cinnamon roll oatmeal. Quick oats will not hold the texture and become mushy, while steel-cut oats will come out crunchy.
- Whatever you do, DON’t overbake the oatmeal! Even if it doesn’t look quite done at first, it will continue to bake in the pan even after you take it out of the oven.
- Don’t dig in right away. You’ll want to let the oatmeal mixture sit 5-10 minutes to thicken before baking. If you don’t it will be a hot runny mess.
- If you like a crunch in your oatmeal try adding some chopped pecans, or your favorite chopped nut.
How Long Does Baked Oatmeal Keep?
Other than the easy prep and amazing flavors, I also love that baked oatmeal is a recipe I can enjoy for more than just a day or two. Baked oatmeal will last about 4-5 days when stored properly.
Ways Store Cinnamon Roll Baked Oatmeal
Since cinnamon roll baked oatmeal contains dairy and eggs, it will need to be stored in the refrigerator. You can simply cover the baking dish with foil or plastic wrap, then place the oatmeal in the fridge until you’re ready to enjoy it.
Another great option for storing is to separate the whole dish into single servings and place each serving into its own airtight container before you place it in the refrigerator. This way you will have already prepped grab and go breakfast every morning for the whole workweek.
