This recipe will stuff more than just your stomachs!

Let me say this now, I LOVE bell peppers. I always keep the mini ones in the house to snack on throughout the day. They are just the perfect little crunchy healthy snack to curb my midday chip cravings. So, I am always down for any recipe where I get to add my favorite vegetable into the mix.

Chicken Stuffed Peppers are the perfect weeknight meal because they are so simple to make and everyone loves them! They are the perfect replacement for your typical taco Tuesdays for times when you want to be a little extra health-conscious, or just need a change of pace.

The crunchy peppers mixed with a spicy chicken blend and gooey melted cheese will have you on cloud nine. From the moment you put them in the oven your mouth will be watering, just waiting to take that first bite. There is nothing better than the smell of homemade stuffed peppers baking in the oven.

How To Make Chicken Stuffed Peppers

In just a little over 30 minutes, you can have restaurant quality stuffed peppers with this amazing chicken stuffed pepper recipe! The directions are so easy, you could even have your kids make dinner for you! Talk about a dream scenario right?

Just follow these few steps! Using a large bowl, combine shredded chicken, cooked rice, red onion, Rotel and cumin. Evenly divide the chicken mixture into pepper halves, choose whatever color pepper you like, and top with cheese. Bake until heated through and cheese is melted. Top with sour cream, a squeeze of lime juice, green onions and a sprinkle of herb seasoning, serve immediately.

Now it’s time for the best part! Enjoy and let your taste buds explode with the blast of flavor that comes with each and every bite of these stuffed peppers.

Give Your Chicken Stuffed Peppers A Twist

With a recipe like this one, there’s a lot of room to have fun with it. Of course, I encourage you to try the recipe as follows, but if you try it once and decide you want to experiment the next time, be my guest!

Stuffed peppers are a great “grab what you have” kind of recipe. I personally love to switch things up occasionally and add a serving of corn and black beans to make it like a DIY pepper burrito bowl.

To make this a vegetarian meal, just eliminate the chicken and add your favorite source of protein, whether that be beans, tofu, or meatless chickn. You can even make it a tad healthier by replacing the rice with riced cauliflower.

Chicken Stuffed Peppers – A Meal Prepper’s Dream!

Who doesn’t love a recipe that just keeps on giving! I don’t know about you, but I know my life can get extremely hectic sometimes, and there isn’t always time to make a complete and nutritious dinner or lunch every single day.

That’s why I like to meal prep as much as I can because it is such a time saver and it’s especially effective if you’re just cooking for 1 or 2. Whip up these chicken stuffed peppers at the beginning of the week, pair it with a simple salad or vegetable and you’ll have a premade meal you can enjoy for most of the week.

How Many Servings is This Recipe?

This recipe makes 8 small or 4 large servings, but feel free to make 1.5 or even 2 batches to get a few more days of meals out of it.

How Long will Stuffed Peppers Keep?

Once you have everything prepped and ready just throw each pepper with your accompanying side, into individual airtight containers and store them in the refrigerator for up to one week.

Can You Freeze Chicken Stuffed Peppers? 

Yes, you can! To get even more time out of your meal prep, simply store any leftovers in the freezer for up to 3 months. Just prepare the mixture and fill peppers as directed in the recipe below.

Wrap uncooked stuffed peppers individually in plastic wrap and place in a freezer-safe container. Freeze until ready to use and thaw overnight in the refrigerator. Once thawed, simply throw the stuffed peppers in the oven and bake according to the recipe.

Ingredients

Chicken Stuffed Peppers

  • 4 large bell peppers, halved lengthwise, seeds removed
  • 1 rotisserie chicken, removed from bones and shredded (approx 1 pound shredded chicken)
  • 2 cups cooked rice (I use Jasmine or brown rice)
  • 1/4 cup diced red onion
  • 1 (10 ounce) can Rotel (tomatoes with peppers)
  • 1 teaspoon cumin
  • 1 cup shredded cheddar cheese

Toppings (optional)

Instructions

  1. Preheat oven to 350° F.
  2. Using a large bowl, combine shredded chicken, cooked rice, red onion, Rotel and cumin.
  3. Evenly divide chicken mixture into pepper halves and top with cheese.
  4. Bake 20-25 minutes until heated through and cheese is melted.
  5. Top with sour cream, a squeeze of lime juice, green onions and a sprinkle of herb seasoning, serve immediately.

Notes

Make vegetarian by omitting the chicken and add 1 cup of corn and 1-2 cup a black beans (drained and rinsed)
