Oatmeal Banana Bread Pancakes {low fat high fiber}

Sometimes you need a breakfast that you can feel good about indulging in! These Oatmeal Banana Bread Pancakes are almost magical, not only are they quick and easy to make, but low sugar and fat and high fiber and protein. Go ahead and grab a fork and plate…..
Can we talk pancakes today? Do you know I didn’t like pancakes when I was young? I’m not sure when I I gave them a chance again and fell in love, but I know I was well into my adult life. Now, pancakes happen pretty regularly at our house.
I love them with pumpkin and spiders.
They taste delicious with bananas and granola, and with bacon and cranberries.
Whether you go with red velvet pancakes or orange, they are perfect to wake up to any morning.
But the one thing all these pancakes have in common, besides being darn good…….is they are not too easy on the hips.
The other day I remembered some low fat high fiber pancakes I used to make. I wanted to change up the Oatmeal Banana Bread Pancakes a little and see how they would come out using non-fat greek yogurt instead of non-fat cottage cheese.

A pancake recipe can’t get much easier than this……just 3 ingredients (4 if you want to add a dash of cinnamon).
The secret to these diet friendly Banana Bread Pancakes is Quaker Weight Control Instant Oatmeal. I’m pretty sure you could make these pancakes using any kind of instant oatmeal you want (or any flavor) but if you want the low sugar, low fat with high fiber and protein, you’re going to want to use the Quaker Weight Control instant oatmeal (this is not a sponsored post). Just toss 2 packets of the instant oatmeal in a blender with some egg beaters and non-fat greek yogurt with a dash of cinnamon, blend, pour, cook and flip. That’s it!
While these pancakes aren’t super thick and puffy, they are soft and tender and have the perfect texture and perfect flavor. It’s hard to believe these Oatmeal Banana Bread pancakes are easy to make, with just 3 ingredients and diet friendly with low sugar, low fat and high protein! Oatmeal Banana Bread Pancakes
Banana Bread lovers are going to love this easy recipe for pancakes that taste just like their favorite quick bread! These low fat, high fiber pancakes are soft and tender and have the perfect texture and flavor.
Ingredients
- 2 packets Quaker Instant Oatmeal, Weight Control, Banana Bread
- 1/2 cup Egg Beaters
- 2/3 cup Non-Fat Plain Greek Yogurt (I like Chobani)
- 1/2 teaspoon cinnamon (optional)
Instructions
- Combine all ingredients in blender.
- Preheat and a non-stick skillet sprayed with cooking spray over medium-medium high heat
- Pour or scoop the batter onto the skillet, using approximately 1/4 cup for each pancake. Cook until bubbles appear on the surface of the pancake and edges appear dry.
- Flip and cook for 1-2 minutes on other side. Place pancakes on a plate and continue cooking until all batter is used up.
- Serve warm with light syrup

They sounds wonderful but I don’t like the yogurt. I did print the recipe though so my daughter can make them since she and my son love yogurt.
I was wondering if you knew what I could use in place of Yogurt? I am always looking for healthier ways to eat and this would be right up my alley.

Thanks Trina. plain yogurt has no real flavor, it’s used in this recipe instead of milk or butter, yielding a creamy and flavorful pancake with out the fat. I don’t care to eat plain no fat greek yogurt on it’s own, but when it’s in a recipe, you don’t know it’s there.
That being said, there is a line and link in the post where I reference my other recipe: The other day I remembered some low fat high fiber pancakes I used to make. I wanted to change up the recipe a little and see how they would come out using non-fat greek yogurt instead of non-fat cottage cheese.
FWIW, I don’t like cottage cheese, but similar to the non-fat yogurt, you don’t even know it’s there, other than when you do use the cottage cheese, it makes these pancakes thicker and a little more lumpy.
