Creamy Chicken Gnocchi Soup
I am beyond excited about sharing this soup recipe because it means we are finally into what I like to call “soup season” in our house. It’s that amazing time of year when I have a different pot of soup simmering every week. While I have a special love for all of my soup recipes, this one definitely gives some of the other family favorites a run for their money.
If you like the Olive Garden chicken gnocchi soup recipe you are going to love this incredibly rich and creamy chicken gnocchi soup. It’s flavored with an amazing mixture of spices and seasonings for a truly one of a kind hearty soup. Not to mention, the gnocchi is the best part! I always love it as pasta, but I think I love it even more used in soup.
Put this soup on your menu for this week’s dinner and you won’t regret it, the whole family, or whoever you’re serving will eat it all up in no time and you’ll love how easy it comes together. This one-pot, no-fuss soup recipe is going to be your new favorite all season long.
The Best Soup Recipes For Fall
When the weather cools down I get excited about two things, first being the first fire of the year in our fireplace, and second is pulling out all of my favorite soup recipes. There is nothing better than a good warm soup on a chilly winter day!
So, to make sure you never run out of any recipe ideas this season, I’m teaming up with some incredibly talented blogger friends for another part of the Tastes of the Season Holiday Recipe series. What is Gnocchi?
If you have never heard of or tried gnocchi, then you are in for a treat! Gnocchi is a small dumpling made from potatoes and flour. The two ingredients are combined to create a dough that’s then molded into small oval-shaped balls that can be boiled and used for pasta dishes.
When cooked the pieces become light and fluffy noodle alternatives that you won’t be able to resist. You will often find them served in just about any kind of pasta sauce, but they also make a great addition to other dishes, like this chicken gnocchi soup!
How To Make Chicken Gnocchi Soup
I love making this chicken gnocchi soup because it’s seriously like a big bowl of comfort that is sure to warm you up on the chilliest of days. I love how easy it is to make, and that I can make it on the stovetop, which means the oven is free for me to bake a batch of my favorite No-Knead Dutch Oven Bread!
To make this recipe you just have to, add olive oil to your Dutch oven over medium-high heat, add the onions, celery, and garlic and sauté until fragrant. Next, you’ll add the carrots and continue cooking.
Once the vegetables have been cooked, just add the broth, cream, chicken, gnocchi and Italian seasoning to the pot and bring everything to a boil, cooking until the gnocchi is tender. Reduce heat to medium when the gnocchi is cooked.
To begin to thicken the soup, you’ll whisk cornstarch with cold water in a small bowl and slowly add to soup. Continue cooking on medium heat, stirring occasionally until it begins to thicken. Lastly, stir in raw spinach leaves, and add in additional cream or broth if you’d prefer a thinner soup. Salt and pepper to taste, and serve.
Tips for Making The Best Chicken Gnocchi Soup
- Make sure your veggies are diced small so they’ll cook in a timely manner. Bigger chunks take longer to cook
- For some part of the recipe you can use alternatives, but not with the spinach. I only suggest using fresh, because frozen or canned will come out mushy.
- For this recipe, I just used store-bought gnocchi that they sell in the pasta aisle, but you can also use frozen, or even make your own.
- If you don’t have Italian seasoning you can use 1 teaspoon of each: dried basil, oregano, and thyme.
- To make this chicken gnocchi soup with uncooked chicken breasts instead of cooked chicken, diced 1 pound of boneless, skinless breasts and add to the pot with the onion, celery, and garlic. Sauté just until meat is cooked through. Add broth, cream, gnocchi, etc. and cook remaining soup according to recipe instructions.
Can I Make Chicken Gnocchi Soup In Advance?
If you want to make this soup a day or so ahead of time you absolutely can! Soup, especially this chicken gnocchi soup is the perfect recipe to eat leftover.
When making the recipe in advance, simply make the recipe according to the instructions below, then let it cool completely. Once cool, transfer the soup into one large airtight container, or a few smaller ones and place in the refrigerator until ready to serve.
When you want to reheat the gnocchi soup you can either place one serving at a time in the microwave or place the whole batch back into your cooking pot and let it simmer on low heat until you’ve reached your desired temperature. Either way works fine, it all just depends on how much time you have!
How Do You Freeze Chicken Gnocchi Soup?
To freeze the chicken gnocchi soup you will follow the same instructions for refrigeration, just this time you will place it into the freezer. When frozen, homemade gnocchi soup will last up to 4 months.
To serve from frozen you will remove the soup from the freezer and let it thaw in the refrigerator overnight. Once thawed reheat the soup in the microwave or over the stove until it’s heated through and piping hot.
Note: If the soup seems separated or grainy when you take it out of the freezer don’t worry, it will all mix back together once reheated. Separation of ingredients can happen once the mixture solidifies.

Creamy Chicken Gnocchi Soup
Chicken Gnocchi Soup is packed with chicken, potato gnocchi, and spinach bathing in a thick and creamy broth. A bowl of this hearty, chicken dumpling-like soup isn’t required, but it’s absolutely recommended.
Ingredients
- 3 tablespoons olive oil
- 1/2 cup diced onions (I use frozen)
- 1/2 cup diced celery
- 3/4 cup sliced or shredded carrots
- 2 tablespoons minced garlic
- 2 cup chicken broth
- 2 cups heavy cream
- 1 pound cooked shredded chicken (I use a rotisserie chicken)
- 1 pound Gnocchi
- 2 teaspoons Italian seasoning blend
- 1½ tablespoon cornstarch
- 2 teaspoons cold water
- 1 cup fresh spinach, chopped
- salt and pepper to taste
Instructions
- Add olive oil to Dutch oven over medium-high heat. Add onions, celery and garlic and sauté until fragrant, about 3 minutes. Add carrots and continue cooking for an additional minute.
- Add broth, cream, chicken, gnocchi and Italian seasoning to the pot. Bring to a boil and cook until gnocchi is tender about 3-4 minutes. Reduce heat to medium.
