This no-bake strawberry cheesecake dessert is loved by all (confession: I have gobbled up my fair share). Not to mention, it’s always a potluck favorite.  Whenever a pan of this creamy delight shows up at any event, it disappears in a flash.

With just a few easy ingredients you can make this dessert in no time at all.  It’s basically just mixing a few items and layering them over a cookie crust.  The hardest part is waiting several hours to let it chill.

This fabulous no-bake cheesecake is sometimes referred to as a Lush Dessert, Delight, or Dessert Lasagna it’s a quick and easy dish that will continue to delight new generations. It’s the perfect amount of sweet, creamy, and fluffy with a little crunch and plenty of fresh strawberries and raspberries. Whatever you call it, call it delicious.

Ingredients For No-Bake Strawberry Cheesecake Dessert

This no-bake cheesecake dessert is perfect to make ahead of time and keep in the refrigerator until ready to serve!

  • Golden Oreos – One package should do the trick unless you and the kids sneak a few!
  • butter – Fully melted, not just softened.
  • cream cheese – You can make a lighter dessert by using fat-free cream cheese. Make sure it’s nice and softened.
  • powdered sugar – Also called confectioners sugar
  • Cool Whip Whipped Topping  – I have not made this recipe with homemade whipped cream, but it should work as a substitute if you prefer.
  • cheesecake instant pudding and pie filling – If you aren’t able to find the cheesecake flavor, you can use traditional vanilla instead.
  • milk – Whatever milk you already have in your fridge will work! I use whole milk but skim and 1% should work just as well.
  • vanilla extract
  • strawberries and raspberries – Fresh berries are a huge highlight of this dish!

How To Make Easy No-Bake Strawberry Cheesecake Dessert

The cheesecake layer is perfectly light and sweet without all the work of classic cheesecake! A hit at parties, potlucks, BBQs, this lush dessert will impress at any event!

Grab your apron and let’s get started!

Step One: Make the golden cookie crust. Combine the cookie crumbs and melted butter and press the mixture into the bottom of a baking dish, and set aside.

Step Two: Whisk the pudding mix and milk together in a large bowl then place the mixture in the refrigerator to let it set up slightly.

Step Three: Beat the cream cheese, powdered sugar, and vanilla together until smooth. Spread the cream cheese mixture evenly over the cookie crust.

Step Four: Remove the chilled pudding from the refrigerator and fold in Cool Whip, and spread over the cream cheese layer.

Step Five: Layer most of the berries over the pudding spread the remaining 8-ounce container of Cool Whip over the berries.

Step Six: Cover the layered dessert and place it in the refrigerator for a few hours (or overnight) to chill before serving. When ready to serve, top with fresh berries and cut into squares. Enjoy!

No-Bake Strawberry Cheesecake Dessert Tips

When making the filling, the cream cheese must be at room temperature for the best results. It won’t leave lumps and will mix with the other ingredients much better when soft.

An offset spatula is a perfect tool for spreading even layers.

If you’d like a firmer crust, you can bake the crust at 350°F for about 8-10 minutes. Cool before adding layers.

Want cleaner more defined slices? Simply cover and freeze this lush dessert at least 6 hours. Then, a few minutes before you are ready to serve remove the pan from the freezer and use a sharp knife to cut down into the bottom crust before removing slices with a spatula to plate. It should defrost fairly quickly and serve!

This dessert is great because you can easily change up the flavors. Try adding blueberries, blackberries, or any combination of berries. You can change up the pudding flavor maybe chocolate, strawberry, banana, coconut or even pistachio pudding mix. You can even omit the berries altogether…..the possibilities are endless!

If opting for a lighter dessert, use fat-free cream cheese, light cool whip, sugar-free pudding mix, and 1% milk.

Don’t want to have to crush cookies for the crust? Use graham cracker crumbs instead.

Because this dessert takes 2-4 hours to properly set, it’s a great option for making it ahead of time. Reserve the berries used for the garnish until just ready to serve so they don’t sink into the Cool Whip layer and disappear.

Storing No-Bake Cheesecake Dessert

Cover up leftovers (if you have any) and store them in the refrigerator for up to 2 days.

Can you freeze no-bake strawberry cheesecake? Absolutely! Store it in the freezer like you would the fridge (but I would double wrap if using plastic wrap, or wrap the dish in plastic and foil) and move it to the fridge to thaw for serving.

No-Bake Strawberry Cheesecake Lush Dessert

Ingredients

  • 1 package (14.3 oz) Golden Oreos
  • 4 tablespoons butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 (8 ounce) containers Cool Whip, thawed and divided
  • 2 (3.4 ounce 4-1/2 cup serving) packages of Jello Cheesecake instant pudding and pie filling (use vanilla if you can't find cheesecake)
  • 3 cups milk
  • 1 teaspoon vanilla
  • 4 cups sliced strawberries and raspberries

Instructions

  1. Crush Oreos to fine crumbs using a food processor (or blender), or place cookies in a resealable plastic bag and crush using a rolling pin, glass, or mallet.
  2. Combine the cookie crumbs and melted butter in a 9x13 baking dish. Press the crust into the bottom of the dish and set aside.
  3. In a large bowl, add the pudding and milk together and whisk for 3 to 5 minutes. Place the mixture in the refrigerator to set up slightly.
  4. In a medium bowl, use an electric mixer to beat the cream cheese, powdered sugar, and vanilla together until smooth. Then, evenly spread the cream cheese mixture over the cookie crust.
  5. Remove the chilled pudding from refrigerator and fold in one of the 8-ounce containers of Cool Whip. Spread the mixture over the cream cheese layer.
  6. Layer most of the berries over pudding (leaving some to garnish with), spread the remaining 8-ounce container of Cool Whip over berries.
  7. Cover the dish and place in the refrigerator at least 2-4 hours to chill before serving. Just before serving, top with remaining fresh berries. Cut into squares and serve. Store in refrigerator.

Notes

To make a lighter version use fat-free cream cheese, light cool whip, sugar-free pudding and 1% or skim milk.
