Can we talk pancakes today?  Do you know I didn’t like pancakes when I was young?  I’m not sure when I I gave them a chance again and fell in love, but I know I was well into my adult life.  Now, pancakes happen pretty regularly at our house.

I love them with pumpkin and spiders.

They taste delicious with bananas and granola, and with bacon and cranberries.

Whether you go with red velvet pancakes or orange, they are perfect to wake up to any morning.

But the one thing all these pancakes have in common, besides being darn good…….is they are not too easy on the hips. 

The other day I remembered some low fat high fiber pancakes I used to make.   I wanted to change up the Oatmeal Banana Bread Pancakes a little and see how they would come out using non-fat greek yogurt instead of non-fat cottage cheese.

A pancake recipe can’t get much easier than this……just 3 ingredients (4 if you want to add a dash of cinnamon).

The secret to these diet friendly Banana Bread Pancakes is Quaker Weight Control Instant Oatmeal.  I’m pretty sure you could make these pancakes using any kind of instant oatmeal you want (or any flavor) but if you want the low sugar, low fat with high fiber and protein, you’re going to want to use the Quaker Weight Control instant oatmeal (this is not a sponsored post).  Just toss 2 packets of the instant oatmeal in a blender with some egg beaters and non-fat greek yogurt with a dash of cinnamon, blend, pour, cook and flip.  That’s it!

While these pancakes aren’t super thick and puffy,  they are soft and tender and have the perfect texture and perfect flavor. Oatmeal Banana Bread Pancakes

Banana Bread lovers are going to love this easy recipe for pancakes that taste just like their favorite quick bread! These low fat, high fiber pancakes are soft and tender and have the perfect texture and flavor.

Ingredients:

  • 2 packets Quaker Instant Oatmeal, Weight Control, Banana Bread
  • 1/2 cup Egg Beaters
  • 2/3 cup Non-Fat Plain Greek Yogurt (I like Chobani)
  • 1/2 teaspoon cinnamon (optional)

Directions:

  • Combine all ingredients in blender.
  • Preheat and a non-stick skillet sprayed with cooking spray over medium-medium high heat
  • Pour or scoop the batter onto the skillet, using approximately 1/4 cup for each pancake. Cook until bubbles appear on the surface of the pancake and edges appear dry.
  • Flip and cook for 1-2 minutes on other side. Place pancakes on a plate and continue cooking until all batter is used up.
  • Serve warm with light syrup
