My favorite cake is one that my mom has made for me numerous times, usually for my birthday! It’s a yummy chocolate cake with a divine icing. It may not be the fanciest cake in the world, but it holds wonderful memories!

I love my mom’s version of German Chocolate cake with coconut frosting. She adds caramel to the cake portion and and then adds cocoa powder to the icing that makes it amazing!!!!!

My Mom would make the most delicious rum cake every Christmas. It was so moist with pecans baked on the top in a bundt pan and when it was cooling in the pan it gets a delicious rum glaze poured on it. After it is turned out on a plate it is so beautiful all by itself, no icing needed. To this day, it isn’t Christmas without that yummy rum cake.

I attempted Amanda’s checkered cake for Mother’s Day last year. I was so excited! But while transporting it to my mom’s, it fell apart. Literally, the sides were falling off the cake. I love Amanda’s cakes, and will definitely try the checkered cake again!

I’ve always loved any type chocolate layers with any type fluffy white frosting and fillings. Ah, just think of the possibilities-
dark, light, malted, German, Deviled food with cream cheese, whipped, marshmallow,buttercream, throw in some fruit or nuts and I am happy.
I love decorated cakes & my favorite has been my son’s groom’s cake made by a friend of mine. It was a pumpkin cake with pumpkin cream cheese frosting, made to look like a tree stump with the bride & groom’s initials carved in the side decorated with chocolate shavings tree bark & meringue mushrooms. It was beautiful and delicious – not one bite was left over.
