Mixed Berry Breakfast Pizza
Impossible to resist, toasted flatbread crust, rich orange mascarpone layer and glossy berry topping.
I’m kind of obsessed with berries. I know they aren’t really ‘in season’ until summer, but as soon as the weather starts to warm up, I want fresh fruit. I walk into the grocery store and the displays of red, ripe strawberries call my name.
The trouble with buying berries this early is they aren’t always as sweet and delicious all on their own, like they are in the summer. But they are perfect in a recipe like this Mixed Berry Breakfast Pizza I made recently. Sweet, creamy, juicy, and fruity from edge to edge. Each bite is loaded with berries!
This breakfast pizza is super simple to put together. Creamy orange mascarpone and fresh sweetened glossy berries are made for each other and the toasted flatbread seasoned with cinnamon and sugar is like icing on the cake.
You could even make the berry glaze topping the day before. Simply mix mascarpone and marmalade while flatbread is toasting — top, serve and enjoy!
I usually prefer something sweet for breakfast, and this Berry Breakfast Pizza hits the spot, without being overly sweet — plus all the fresh berries make it more healthy than a doughnut right? 😉
I’ll choose fruit in my dessert over a big slice of chocolate cake any day…..unless that piece of cake is topped with raspberries 😉
Berry Breakfast Pizza would be perfect for a brunch, bridal or baby shower, Mother’s Day, or dessert at a BBQ! Don’t let the word breakfast limit this quick treat to the morning hours. Mixed Berry Pizza is perfect for any party or get together. Make them for Memorial Day or the 4th of July…or any time you want a special dessert.

Mixed Berry Breakfast Pizza
It's impossible to resist the toasted flatbread crust, rich orange mascarpone layer and glossy berry topping. Easy to prepare the night before and serve the next morning, or any time of day!

Directions:
Preheat oven to 325 degrees F. Place flatbread rounds on a parchment lined baking sheet.
For berry topping, in a medium saucepan combine 1/4 cup granulated sugar, cornstarch, and salt. Stir in the water. Stir in 3/4 cup of the berries. Cook and stir over medium heat until thickened. Remove from heat. Add an additional 1 cup of berries and the 1 teaspoon butter, stirring until butter is melted. Gently stir in orange peel.
In a medium bowl combine mascarpone cheese, orange marmalade and vanilla; beat with an electric mixer on low to medium speed until smooth. In a small bowl stir together the 2 teaspoons granulated sugar and cinnamon; set aside..
Place baking sheet with flatbread rounds in oven for about 5-7 minutes.
While flatbread is still warm, brush with the 2 tablespoons melted butter; sprinkle with the cinnamon and sugar mixture. Spread mascarpone and marmalade mixture over flatbread rounds. Spread berry topping over mascarpone mixture. Top with the remaining berries. If desired, dust with powdered sugar.
Make-Ahead Tip:
Make the berry topping and cool completely. Cover and chill at least 2 hours or up to 8 hours before using.
