With the holidays in full swing, many of us are in the kitchen cooking and baking up a storm, have a to-do list a mile long, and add to that the stress of holiday gatherings and Christmas parties. Is it any wonder most of us feel stressed during the holidays?
I try to reduce some of my holiday stress by taking shortcuts when I can. I’m going to let my little secret out of the bag …….. I’m a big fan of the bagged cookie mixes, and I don’t hesitate to use them in some of my holiday baking!
What if I told you that you could make a cool chocolate mint cookie in no time with just a few simple ingredients?
Of course, you could make these using a basic sugar or butter cookie recipe from scratch, but if you’re pressed for time (and less mess) this is a great alternative! Leaving you with more time for shopping, wrapping or dancing to your favorite holiday tunes!

Mint Chocolate Chip Cookies
Mint Chocolate Chip Cookies are filled with Andes mints and dark chocolate. If you like chocolate and mint together, you will LOVE these easy cookies!
Ingredients
- 1 pouch Betty Crocker® sugar cookie mix
- 1/2 cup butter, softened
- 1/2 teaspoon mint extract
- 1 egg
- green food color
- 1 cup creme de menthe baking chips
- 1 cup dark chocolate chips
Instructions
- Heat oven to 350°. In large bowl, stir in cookie mix, butter, extract, food color and egg until soft dough forms.
- Stir in creme de menthe baking chips and chocolate chips.
- Using a small cookie scoop, drop dough 2 inches apart on ungreased cookie sheet.
- Bake 8-10 minutes or until set. Coll 3 minutes; remove from cookie sheet to wire rack.
- Cool completely before storing tightly covered at room temperature.
- Enjoy!

*NOTES:
The green food color is just to give the cookies a “mint” look, but you can certainly eliminate it if you wish.
I used CK leaf green gel food color and just a bit of Americolor bright white gel food color.
Doughmaker Aluminum cookie sheet is a great pan for cookie baking.

The color of those cookies just screams ” Christmas”. So fun! As for Christmas traditions – oh, we have so many. One of my favorites is watching my mum and mother-in-law dress up as reindeer each Christmas morning and sing us Jingle Bells. Always entertaining!
I create simple, special holiday traditions in my family by keeping it simple and just make it about family and fun.
I have learnt that my family likes tradition and don’t need me to try out new recipes at Christmas. They are happy with things I made every year.
My tip is to try and remember the reason for the season. It helps keep me calm when my decorating or baking creations don’t turn out quite right : )
This year I gave my newly married son my artificial Christmas tree that I got the year he was born (1987). All my lights, garlands and tree skirt were in the box, so when I put up the smaller tree he gave me, I had no lights. Alas, I decorated the tree with no lights, but added a large string of pearls, icicle tinsel and all my glass Santa ornaments. I LOVE IT! Simple and sweet.
I LOVE building a gingerbread house with my grandchildren.
My tip is to create a xmas planner working your time up to xmas with all the traditions and xmassy things you need to do ! Get you r prezzies all packed …i do that by doing all my gift shopping on Black Frday…Keeps me organised and stress free..

my oldest always remember putting together one of the $10 gingerbread house its– so simple but so fun!
My tip is to slow down and enjoy things. We do simple things together, baking, decorating, etc. The little things have become traditions for us over the year.
We love to make sugar cookies with the kids, frosting, sprinkles and all. Its always a huge mess, but so much fun!
We go and see Christmas Lights every year together with cousins!! It is a great way to spend time together before Christmas!
i want to start the pickle ornament tradition that is on pinterest these days. we spend Christmas Eve with Grandparents and cousins and Christmas with immediate family – always have since I was a little girl
We are trying to make the Christmas holidays more about spending TIME together rather than buying gifts. . .a few years ago my mom took all of us on a family vacation at an all-inclusive resort. . .the kids certainly wouldn’t still remember the tangible gifts they received that year (three years ago) but they still frequently talk about their experience. This year we’re trying to do that on a smaller scale. . .instead of buying gifts for our children from us we’re taking them to an indoor waterpark hotel for two days. . .my sister has jumped on that bandwagon too and her gift to them is to take them to an NFL game. The time with our children is priceless. . .

Every year I make Christmas ornaments for my family and friends. When I lived in Florida I made them using the shells I picked up and wrapping them in wire. Now that I’m in PA I have been working with glass ornaments and wrapping them with wire, etc. I love that our tree is @ 50% hand-made….it gives it such a personal touch.

One tradition in our family is hot chocolate, christmas music and driving around admiring the christmas lights as a family. We have done it for so long that my grown children look forward to it each year and now we do it with our grands.
Our simple Christmas tradition is baking cookies and decorating together every Christmas eve for Santa!
We pick something simple to make a tradition. We like to ride around and look at lights and decorations.
My family and I create simple Christmas traditions by cooking a whole feast. We grill picanha (Brazilian meat), marinate vodka salsa, bake soft rolls, cook some rice, and other trimmings to fits our fancy. We are always satisfied by the quality of the food and the company we share together as a family.
Ever since I can remember my Mother has always given an ornament with every Christmas gift she gives. It was helpful when I moved out because I had a box of ornaments already! I have started doing this with my own Christmas Shopping now. Looking for unique ornaments to peoples tastes is always the best part!
Each year, we load the kids into their car seats with a warm drink and a snack and then go for a drive to look at holiday lights, including a light show and 4 really decked out houses while we play Christmas music.
We keep it simple by decorating gradually as Christmas approaches. Each weekend, more is done until the weekend before the holiday, the whole house is ready! This makes the job easier and builds anticipation.
Our holiday tradition is to have everyone participate in the holiday decorating, even the little ones!
For our holidays, my mom and I have a tradition of crafting different decorations each year. It’s a great creative outlet and tons of fun!!

Every year we play Christmas music and decorate the tree together, We have a great time together.
I have tried since I was a “grown woman” to make yummy treats and give them to family and friends. The Boss and I also have a tradition of listening to all the Christmas CDs and tapes (yes, we still have some tapes!) from Thanksgiving until Christmas. We have so many that it usually takes that long to listen to them all.
I bake tons of cookies in advance and then freeze them, then i can share then with friends all season long.
We are lucky to have a very famous neighborhood near our house that has blocks of houses loaded with Christmas lights and decorations. There is even music playing and hot chocolate or cider on sale there. We have a tradition of either walking through the neighborhood or driving through if it’s too crowded.
We have an advent calendar which we fill with Christmas-related activities: put up tree, read a Christmas story, go on a family outing, buy gifts for giving tree, make Christmas cookies, etc. It can be difficult when “Make Gingerbread House” shows up on a Tuesday, so we give ourselves some leeway but it keeps us moving forward.
I love the stress free baking, I try and bake some things and freeze before baking and it works pretty well!

On Thanksgiving, upon our guests arrival, we hand each of them a sticky note. They write down something they are thankful for (can be anonymous) and we stick them all around the house to remind everyone why we are there.
