Today is the day. The day we celebrate breakfast ! It’s time to grab those aprons and share your favorite breakfast recipe that includes dairy. Link up at the end of this post (or share in the comments) and you will be entered to win a $250 Amazon gift code. (details below)
Why are we celebrating a dairy breakfast? Because the California Milk Advisory Board and I have teamed up to talk about the importance of a nutritious breakfast, that includes dairy. We want to remind you that, not only is the calcium in dairy important for growing strong bones, but it’s also packed full of protein.
Have you seen their commercials? They were the inspiration for our partnership. They show how California dairy can be a part of everyday family life, like breakfast. Go check them out here – my favorite is the California cow singing in the shower while the family enjoys breakfast downstairs! lol
Last week I flew to Orlando to visit the Daily Buzz TV and talk about this very issue and share the recipe for my Southwest Baked Egg Cups with California cottage cheese and other varieties of California cheese. Check it out!
Nutritious Breakfast includes Dairy
Adding dairy to your breakfast, can help you from becoming hungry before your next meal. Kids who eat a nutritious breakfast may learn better and even do better in school, because they are less likely to have hunger pains, such as -being tired, getting headaches or even become cranky.
The first step to making sure your kids eat a nutritious breakfast, is to set a good example, by making healthy food choices . Make sure YOU are eating breakfast. Keep simple grab-and -go foods on hand such as California cottage cheese and yogurt cups, string cheeses and fruit. You can even make a breakfast casserole, such has Southwest Baked Egg Cups or Creme Brulee Baked Oatmeal the night before. Store in the fridge, and simply heat in the microwave the next morning.
Ease Morning Routines
Mornings can be a crazy time in any household, whether you have little ones to help get out the door, or not. Ease the morning scramble by getting everything ready the night before, such as: back packs, signed permission slips, lunches, even car keys and cell phones. Have them all gathered and in a designated spot, either by the front door or on a table. That way you avoid that morning panic when you can’t find a jacket or homework paper that is due.

Mmm, there’s some great ones that all sound yummy! This is our easy but tasty breakfast that we do several times a month.
Scramble delight
6 eggs
4 potatoes (diced)
1 c Green pepper
1/2 c Onion
1-2 cups Shredded cheddar cheese
I like my veggies crispy so I add them half way thru cooking. Combine the other ingredients w/ salt & pepper fry up add vegetable (any kind would work whatever you like) & throw into a warmed tortilla shell. If your like my husband & love a lil spice add salsa or hot sauce too. Even a dab of sour cream. Enjoy!

Cottage Cheese Muffins
1 cup all purpose flour
1/2 cup salted butter, softened
1 cup cottage cheese
Heat oven to 350 degrees. Grease 12 regular muffin cups. In large bowl, combine all ingredients. Spoon evenly into muffin cups. Bake until tops are golden brown, about 20-25 minutes. Run a knife around edges of muffins to loosen. Cool 10 minutes and remove from cups and serve. These are wonderful with jam!

I love alton brown’s simple crepes for breakfast! Served with ricotta cheese, fruit, walnuts, and honey. It’s just enough sweetness but a protein packed start to the day!

cottage cheese, oatmeal pancakes
1/2 cup oatmeal
1/2 cup cottage cheese
1 teaspoon of vanilla
4 egg whites
Blend ingredients in a blender. Spray pan with cooking spray and cook them in silver dollar increments.
Look at you like a famous rockstar on TV!!!!! WHAA HOO! :)hehe
Our Boyscout Troop likes to make this breakfast on their campouts.
Grandpa’s Grub
6 slices of bacon, fried crisp
1/2 c. chopped cooked ham
6 eggs
1/2 c. chopped onions
1/4 c. chopped green peppers
2 c. shredded potatoes
1 c. shredded cheddar cheese
1/4 c. cottage cheese
salt and pepper to taste
Saute onions and peppers in a small amount of bacon fat until almost tender. Add shredded potatoes and fry until potatoes are browned (add more bacon fat if needed). While potatoes are frying, beat eggs and cottage cheese in a bowl. When potatoes are browned add crumpled bacon, ham, salt and pepper, and cheese. Mix. Then pour egg mixture over all and stir until eggs are cooked. Serve. Or fill warm flour tortillas for breakfast burritos add salsa. You can change the recipe to whatever you have on hand, different veggies and meat like broccoli, sausage, etc. The boys used to call it “Garbage” but that didn’t get such a good response.
My husband loves these in the morning. I eat very little processed or packaged food, so the only thing bought already “done” are the tortillas. If you don’t mind processed food, you can buy already package sausage, like Jimmy Deans.
Breakfast Burritos
1 pound ground pork with almost no fat
1/8 cup ground or rubbed sage (I like ground better because it has more flavor)
1 Tbsp salt
8 large or 10 medium eggs scrambled with 2 Tbsps water
1 cup chunky salsa*
2 cups shredded cheddar cheese
tortillas (usually about 14)
Plastic wrap
In a skillet, mix the pork, sage and salt until it is well blended. Then fry it until it is completely done. Drain in a colander. In the same pan, cook the eggs, scrambled style. In a large bowl, mix the eggs and sausage. Let it cool a little. Add the salsa and mix. Then add the cheese and mix some more, until it is completely mixed in. Taking one tortilla at a time, put some mixture across the tortilla, about 1/4 of the way up. Pull the sides towards the middle so the filling doesn’t fall out and then roll up the tortilla. Individually wrap each burrito in plastic wrap. From here you can freeze them for a long time or refrigerate them for about two days. Heat in the microwave.
** For from scratch salsa, chop tomatoes, red bell peppers, white onion, cilantro, cucumber and jalapeño to desired chunkiness. Add in some salt to taste and the juice of one lime.**

Blueberry Baked Oatmeal:
2 cups quick cooking oats
1/3 cup packed brown sugar
1 ½ teaspoons baking powder
½ teaspoon cinnamon
½ teaspoon salt
1 cup milk
2 eggs
2 tablespoons oil
1 teaspoon vanilla
1 cup blueberries

This is a favorite recipe of ours. It has plenty of dairy…yum!!
Sausage and Egg Quiche
1 lb ground fresh sausage
8 large eggs
16 oz. sour cream
3 cups grated sharp cheddar cheese
Salt and Pepper to taste
2 Deep Dish Frozen or pre-made Pie Crusts or make your own.
Preheat oven to 350 deg.
Brown sausage till done and drain.
Pour sausage in bottom of both pie crusts evenly.
Whisk together eggs, sour cream, cheese, salt and pepper. Pour over sausage. Bake pies 35-40 minutes until knife inserted in center comes out clean. This is a very simple and good recipe as it is. You can add other seasonings or ingredients, use bacon or ham, different cheeses, add veggies. Make it your own.

Hi I don’t have a blog, but am an active reader! My favorite dairy breakfast is:
1/2 cup plain greek yogurt
1 tsp vanilla extract
3/4 tsp almond extract
1 tbsp chocolate chips
Stevia to your taste
…tastes sort of like cookie dough…it’s yummy!

I don’t have a blog to link to but I love the baked egg breakfast cup recipe. I’ve been trying to think of more protein packed breakfasts for our kids. These are perfect because I am NOT a morning person and I can make them ahead of time! Thank you so much for the great recipe.
Our favorite recipe breakfast recipe that includes dairy is a breakfast smoothie. Since it is a smoothie, it is also great to pair with a bagel or something else to get even more out of our breakfast meal.
Breakfast Smoothie:
1 container plain yogurt
1 banana
1/3 c peanut butter
1/2 c milk
1 c crushed ice
(optional) chocolate syrup or chocolate carnation drink mix
Throw everything in the blender and blend until everything is mixed!
