Ingredients

  • 1 pound ground chicken
  • 1 large egg
  • 1/2 teaspoon salt
  • 2 teaspoons Italian seasoning
  • 1/2 cup Parmesan cheese
  • 2/3 cup Italian breadcrumbs
  • 1 cup chicken broth
  • 1 ½ cups marinara sauce
  • 1 cup freshly diced mozzarella

Instructions

  1. Combine the ground chicken, egg, salt, Italian seasoning, Parmesan cheese, and 1/3 cup of breadcrumbs in a mixing bowl. Use your hands to work the ingredients together until thoroughly combined. 
  2. Break the mixture into 12-14 pieces and roll each one into a ball. 
  3. Heat a little bit of oil in a large cast iron or oven-safe pan. Cook your meatballs for about 2 minutes per side, or until golden brown. 
  4. Remove your meatballs from the pan. Add the chicken broth and marina sauce to the pan. Stir to combine and then let the sauce heat up to a low simmer. While the sauce is heating up, preheat your oven to 350°F. 
  5. Once the oven is preheated, add your meatballs back to the pan. Top with the cheese and remaining breadcrumbs. Cook in the oven to 15-20 minutes, or until the cheese is completely melted and starts to bubble.
