Last year we were amazed at the large collection of soups shared with us during our first SoupaPalooza. We know that this year will be even bigger and better and can’t wait to see the soups you share!

Creamy Tomato Soup
2 Tb. butter
1/3 C. shallots, chopped (you could substitute for finely chopped onion)
2 cloves garlic, minced
2 1/2 C. vegetable stock
3 Tb. white rice
1/2 tsp. kosher salt
1 28oz can whole tomatoes
handful of fresh basil, torn into small pieces
1 C. heavy cream
salt, pepper, and a few drops of hot sauce
Melt the butter over medium-low heat in a heavy bottomed saucepan. Add shallots, and garlic. Cook until softened, about 3 minutes.
Add the vegetable stock, rice, and kosher salt. Bring to a boil, then reduce heat to low and cover for 20 minutes.
Add the can of tomatoes with their juice, and fresh torn basil. Cover and simmer for 10 minutes.
Let soup cool slightly then using an immersion blender blend until smooth. On low reheat the soup, and whisk in the cream. Season with salt, pepper, and hot sauce.
Serves 4-6
I’m sharing my favorite Mom recipe from when I was a kid. Super simple, super tasty, spinach soup.
Ingredients:
1 pkg sliced pepperoni
1 lg container chicken broth
1 package frozen chopped spinach
1/4 lb sliced ham
1 c instant potatoe flakes
1 qt water
Preparation:
Add water and broth to large soup pot, bring to a boil. Add frozen spinach. Allow to return to boil. Meanwhile, slice ham into small strips. Once liquid has returned to a boil reduce to a simmer and add pepperoni and ham. Simmer 10-15 minutes. Add potatoe flakes, simmer five minutes more. Serve with crusty bread and butter.

My favorite soup is black bean soup. I put all of the ingredients in the crock and cook on low for the day. It typically use a ham steak cubed, 3 cans of black beans, garlic and jalapenos to taste. Sometimes if I have leftover sausage I’ll add that too. I usually top it with cheese and crushed tortilla chips. Simple and easy and I can eat the whole crock in a few days!

My favorite chili:
1 T oil
2 diced onions
1 diced red bell pepper
6 minced cloves of garlic
1/4 c. chili powder
1 T cumin
1/2 t red chili powder
2 pounds lean beef
28 oz tomato puree
28 oz diced tomatoes
2 – 14.5 oz cans dark red kidney beans
Heat the oil in a large pot, then add the onions and pepper, cooking for around 7 minutes. Add the garlic, and then promptly add the spices. Allow to cook for less than a minute, then add the ground beef. Cook the beef until no longer pink, then add the tomato puree, tomatoes, and beans. Let simmer for a good 1-2 hours and then enjoy!

I started making this recipe for minestrone when I was 9 years old; it’s really easy and really good, esp with bread and Parmesan cheese.
Minestrone
INGREDIENTS
1 16-oz can kidney beans
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon pepper
1 tablespoon vegetable oil
¼ cup chopped fresh parsley
1 sm. zucchini, unpeeled & diced
2 celery stalks with leaves, finely chopped
2 small carrots, peeled and diced
1 small onion, minced
1 16-oz can whole tomatoes, cut up with a spoon
3 tablespoons butter
2 ½ cups water
1/3 cup elbow macaroni, uncooked
½ cup beef bouillon or tomato juice
Salt to taste
DIRECTIONS
1. Put beans in a large kettle and mash them slightly with a fork.
2. Add garlic, salt, pepper, oil, and parsley. Stir well.
3. Add all vegetables, butter, and water to the kettle. Bring to a boil over medium heat, stirring occasionally.
4. Lower heat, cover the kettle, and simmer 1 hour, stirring occasionally.
5. After 1 hour (or longer), add macaroni and beef bouillon or tomato juice. Simmer 15 minutes, stirring occasionally. Add salt to taste.
Serves 6 to 8

Farm Chicks Enchilada Soup
Heat 2T Olive oil and stir in 1 medium onion chopped and 3 cloves garlic minced.
Then add 4 C Chicken broth
3C shredded cooked chicken
1 15 ou can black beans
1 14.5 ounce diced tomatoes
1 1/2cups frozen corn kernels
1 7 ounce can salsa verde or 4 ou can chopped green chilis
1 T seeded minced jalapeno
1T chili powder

Cheeseburger Chowder
Ingredients:
1/2 pound hamburger meat
3/4 cup onions, chopped
3/4 cup shredded carrots
1 cup diced celery
1 teaspoon basil
1 teaspoon parsley
4 tablespoons butter
3 cups chicken broth
4 cups diced potatoes
1/4 cup flour
2 cups cubed Velveeta cheese
1-1/2 cup milk
salt and pepper to taste
1/2 cup sour cream
Directions: Brown hamburger. Add butter, onions, carrots, celery, basil, parsley and potatoes, cover and cook until vegetables are semi-tender. Add broth and bring to a boil.
Reduce heat, cover and simmer 10-12 minutes.
Meanshile mix well, flour and milk, add to broth. Bring to a boil and stir constantly for 2 min or until it thickens. Reduce heat, add cheese, salt pepper and sour cream.
8 servings.
This recipe feeds my sister’s family and she has a husband and 4 hungry farm boys! They love it!
Ok, I’m sharing a stew that is an all time favorite in my house!!!! It’s delicious!
Brunswick Stew
• 1 Whole Chicken (or 3 ½ lbs.)
• OR 3 lbs cooked beef (or you can do both)
• 1 cup water
• 4 potatoes peeled and cubed
• 1 med. Onion
• 1 can lima beans
• 1 teaspoon salt
• ½ – 1 cup BBQ sauce ( or to taste)
• ¼ liquid smoke
• 1 teaspoon pepper
• 1 can corn drained
• 1 can diced tomatoes
• ¼ butter
• ½-1 cup dried bread crumbs
Boil chicken, discard skin and bones, cube and return to broth. Add it all to the crock pot.
Add everything together except for the potatoes and bread crumbs. Cover and cook for 6-8 hours. Add potatoes about the 6th hour. Add bread crumbs about 30 minutes before you eat.
Can’t wait!! I R.E.A.L.L.Y. want that stand mixer!!!
Creamy Tomato Soup _ You will want to double this… SO good!!
1/4 lb. bacon
2-28 oz cans peeled whole tomato
1 onion–minced
2 ribs celery–thinly sliced
3 Tbsp brown sugar
salt & pepper to taste
6 Tbsp butter
3 Tbsp flour
1 cup milk
1 cup half & half
Fry bacon, drain and crumble–set aside.
Blend tomatoes in food processor or blender and put into 4 quart pan.
Saute onion & celery until clear–add to tomatoes along with brown sugar, salt & pepper.
Simmer 20 minutes. In saucepan melt butter. Add flour and brown slightly on low heat.
Slowly add milk and half & half. Cook until bubbly.
Add milk mixture and bacon to soup.
Mix well and heat.
Serves approx 6

This isn’t my recipe but I love it!
Vegan Potato Soup
Four-Five Golden Potatoes
Coconut Milk
Vegetable Broth or Water
Medium Onion
Dash of nutmeg
Salt and pepper to taste
Chop the onion and saute it in a deep(ish) pot, then add the chopped up potatoes and cover with the water or broth and bring to a boil. Cook until tender then add coconut milk and nutmeg. Bring to a light boil then puree and add salt and pepper to taste.
This isn’t like the most to die for soup in the world, but it’s pretty healthy and tastes good on it’s own. It only has around 200 calories per cup so that’s a huge bonus too!

Smoky Shrimp Ribollita
Ingredients
3 tablespoons olive oil
1 1/2 cup carrots, finely chopped
1 cup celery, finely chopped
4 garlic cloves, minced
1 cup leeks, trimmed and sliced (about 2 leeks)
1 pound large uncooked shrimp, with peels on
1 tablespoon smoked paprika
6 cups Swiss chard, coarsely chopped
4 cups low sodium vegetable broth
2 cups water
1 (28 ounce) can diced tomatoes, with juices
1/2 cup red wine
1 (15 ounce) can cannellini beans
4 cups torn pieces of baguette or Italian bread
1/2 teaspoon crushed red pepper flakes
Parmesan cheese
Directions
Heat olive oil in a Dutch oven pot over medium heat.
Add carrots, celery, garlic and leeks. Saute for 3 minutes.
Add in unpeeled shrimp and smoked paprika. Saute for 5 – 7 minutes until shrimp is cooked, stirring often. Remove shrimp, cool slightly, peel and store in refrigerator.
Add Swiss chard, broth and tomatoes. Bring to a boil and then reduce to a simmer.
Add in wine, cover and cook for 1 hour over low heat.
Add in shrimp, beans and bread, cook for 5 more minutes.
Serve with Parmesan cheese sprinkled on top of each bowl.

2 lbs burger, brown w/2 small-med. onions, drain
6 green peppers —cut, boil for 15-20 min.
2 large cans of tomato juice
1 box white minute rice
4 cups water
Add burger, peppers, juice, rice and water, cook for 2-3 hours
Or
2 lbs burger, brown, drain
6 green peppers —chunked
2 small-med onions
2 large cans of tomato juice
1 box white minute rice
Add burger, peppers, onions, and 1 juice to crock pot, cook on low until peppers and onions are tender, add other juice and prepared rice
