Muffins
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/8 teaspoon salt
- ½ cup light brown sugar, packed
- ½ cup milk
- ⅓ cup unsulphured molasses
- 2 medium eggs
- ¼ cup avocado oil
Crumble Topping
- ¼ cup all-purpose flour
- 5 tablespoons light brown sugar, packed
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground ginger
- 3 tablespoons unsalted butter, room temperature
Maple Cream Cheese Icing
- 1 cup powdered sugar
- 1 ounce cream cheese, room temperature
- 1 tablespoon milk
- 1 tablespoon pure maple syrup
Instructions
- Preheat the oven to 350°F. Line 10 cups of a standard muffin tin with paper liners.
- In a large bowl, whisk together the muffin flour, baking powder, cinnamon, ginger, cloves, salt, and brown sugar.
- In a separate bowl, whisk together the milk, molasses, eggs, and avocado oil.
- Pour the wet ingredients into the dry ingredients and beat with an electric mixer until well combined and very smooth.
- Divide the batter evenly among the 10 prepared muffin cups, filling them almost to the top.
- In a separate bowl, use your hands to mix all the crumble topping ingredients until moist and clumpy. Sprinkle evenly over the muffin batter.
- Bake for 18–20 minutes, until the tops spring back slightly when gently pressed. Check at 18 minutes to avoid overbaking.
- Remove from the oven and let cool for about 30 minutes before icing.
- Beat all the maple cream cheese icing ingredients with an electric mixer until very smooth. Drizzle over the cooled muffins, using as much or as little as you like.
