Why We Love This Breakfast Pizza
I’m kind of obsessed with berries. I know they aren’t really ‘in season’ until summer, but as soon as the weather starts to warm up, I want fresh fruit. I walk into the grocery store and the displays of red, ripe strawberries call my name.
The trouble with buying berries this early is they aren’t always as sweet and delicious all on their own like they are in the summer. But they are perfect in a recipe like this Mixed Berry Breakfast Pizza. Sweet, creamy, juicy, and fruity from edge to edge. Each bite is loaded with berries!

What You Need To Make This Fruit Pizza
- flatbread rounds – I usually use Stonefire flatbread. They’re usually in the bakery or deli sections of the grocery store.
- granulated sugar
- cornstarch
- mixed fresh berries– fresh berries are best for this recipe. I like to use raspberries, blueberries, blackberries, and strawberries
- butter
- orange zest
- mascarpone cheese – an Italian soft cheese made from cream and resembling cream cheese, it’s slightly sweet, rich, and buttery.
- orange marmalade – similar to jam but made from bitter oranges. You can use orange preserves as a substitute.
- vanilla extract
- ground cinnamon
Tools Needed
- baking sheet – I LOVE my aluminum Baker’s Half Sheet pans. I actually own 4 of them and use them for everything!
- parchment paper – I like to use the pre-cut parchment sheets. They fit the half sheet pan perfectly.
- saucepan
- electric mixer – handheld or stand mixer
- silicone pastry brush – you’ll need this for brushing melted butter on the toasted flatbread
- pizza wheel – for cutting into pizza slices
How To Make Berry Breakfast Pizza

This breakfast pizza is super simple to put together. Creamy orange mascarpone and fresh sweetened glossy berries are made for each other and the toasted flatbread seasoned with cinnamon and sugar is like icing on the cake.
You could even make the berry glaze topping the day before. Simply mix mascarpone and marmalade while flatbread is toasting — top, serve and enjoy!
Make Berry Topping: First, you will cook some of the berries with sugar and cornstarch until thickened. Then remove the pan from the heat and add more of the berries along with a little butter and orange zest and set aside to cool.
Make Orange Mascarpone Spread: Here you will combine the mascarpone cheese, orange marmalade, and vanilla with an electric mixer until smooth.
Toast Flatbread: Place the flatbread rounds on a parchment-lined baking sheet and toast in a 325° F oven for about 5-7 minutes.
Make Fruit Pizzas: Brush the warm toasted flatbread with butter and sprinkle with cinnamon and sugar. Next, spread the orange mascarpone on the flatbread. Spoon the berry topping over the mascarpone and top with the remaining berries. If desired, dust with powdered sugar, or garnish with fresh mint.
I usually prefer something sweet for breakfast, and this Berry Breakfast Pizza hits the spot, without being overly sweet — plus all the fresh berries make it more healthy than a doughnut right? 😉
I’ll choose fruit in my dessert over a big slice of chocolate cake any day…..unless that piece of cake is topped with raspberries 😉
How To Serve and Store Sweet Berry Breakfast Pizza
Refrigerate your Breakfast Pizza if not serving right away. To serve, cut into pizza slices with a pizza wheel! Store leftovers in an airtight container and keep them in the fridge for up to 3 days!
Keep your berries, as well as any fruit and veggies fresh in your refrigerator longer by using produce savers.
MAKE-AHEAD TIP:
Make the berry topping and cool completely. Cover and chill up to 24 hours before using.

Why This Recipe Works!
Easy – While the recipe may look long, it’s not complicated at all. You basically toast the flatbread, heat and thicken the fruit, mix the mascarpone with marmalade and layer it all together! Bam!
Not Too Sweet: Unlike other fruit pizzas with a cookie crust and frosting, this dessert or breakfast pizza is not overly sweet.
Make-Ahead Option: The fruit filling can be made ahead of time. When ready to serve, mix the orange mascarpone while flatbread is toasting in the oven.

Mixed Berry Breakfast Pizza
Mixed Berry Breakfast Pizza...it's not just for breakfast! It's impossible to resist the toasted flatbread crust, rich orange mascarpone layer and sweet berry topping. Easy to prepare the night before and serve the next day!
Ingredients
- 4 flatbread rounds
- 1/4 cup granulated sugar
- 4 teaspoons cornstarch
- Dash salt
- 1/2 cup water
- 3 1/2 cups mixed fresh berries
- 1 teaspoon butter
- 1 teaspoon orange zest
- 8 ounces mascarpone cheese
- 4 tablespoons orange marmalade
- 1/2 teaspoon vanilla
- 2 teaspoons granulated sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 325 degrees F. Place flatbread rounds on a parchment-lined baking sheet.
- For berry topping, in a medium saucepan combine 1/4 cup granulated sugar, cornstarch, and salt. Stir in the water. Stir in 3/4 cup of the berries. Cook and stir over medium heat until thickened. Remove from heat. Add an additional 1 cup of berries and 1 teaspoon butter, stirring until butter is melted. Gently stir in orange peel.
- In a medium bowl combine mascarpone cheese, orange marmalade, and vanilla; beat with an electric mixer on low to medium speed until smooth. In a small bowl stir together the 2 teaspoons granulated sugar and cinnamon; set aside.
- Place baking sheet with flatbread rounds in the oven for about 5-7 minutes.
- While the flatbread is still warm, brush with the 2 tablespoons melted butter; sprinkle with the cinnamon and sugar mixture. Spread mascarpone and marmalade mixture over flatbread rounds. Spread berry topping over mascarpone mixture. Top with the remaining berries. If desired, dust with powdered sugar.
