Last year we were amazed at the large collection of soups shared with us during our first SoupaPalooza. We know that this year will be even bigger and better and can’t wait to see the soups you share!
Tie on your bib and grab a spoon! It’s time for the second annual Soupapalooza. Whether you enjoy a clear broth or a thick hearty soup you’re sure to find one, or many to sip, slurp and enjoy!

My favorite soup ingredients…sweet Italian turkey sausage, ground turkey, potatoes, cannellini beans, onions, carrots, celery, squash, kale and seasonings (including nutmeg). Cook sausage and set aside, cook turkey, season, and set aside, cook veggies and season, add meat, add beans, add 4-6 cups of chicken stock. Simmer until beans and potatoes are tender. Mash some potatoes and beans for thickness, against the pot and stir well. Turn off heat, add kale and cover for several minutes then serve immediately. Make up some cheesy garlic bread to sop up the extra juices!

I’m submitting a recipe for Turkey Chili with Green Tea:
1 pound ground turkey
1 medium onion, diced
1 green bell pepper, diced
1-1/2 teaspoons garlic, finely chopped
1 teaspoon Italian seasoning
1 tablespoon chili powder (or to taste)
2 (14.5-ounce) cans diced tomatoes (I have used both chili style and garlic, basil, and oregano tomatoes)
1.75 cups of salsa (I use medium)
1 cup strongly steeped green tea
Salt and Pepper to taste
Sugar to taste
Brown the turkey, then add onion, pepper, garlic, and spices. Cook until onions are translucent. Add remaining ingredients and bring to a boil. Reduce the heat, then let the chili simmer on the stovetop for at least 30 minutes or until ready to serve. Enjoy! This chili is even better the next day!

Here is my offering:
Sauerkraut Soup
Ingredients:
8 cups chicken stock
1 pound of sauerkraut (You can also substitute shredded cabbage for up to half a pound of the sauerkraut)
1 medium onion, chopped finely
4 slices of bacon, chopped finely
¼ pound mushrooms, sliced
4 tablespoons flour
Sour cream
Preparation:
In a soup pan, fry the bacon and onion until the bacon is crisp. Drain off the excess fat, if any, and add the mushrooms. When they begin to soften, sprinkle on the flour and stir until everything is coated. Add the stock and sauerkraut, stirring, until the soup thickens. Serve with a dollop of sour cream.
