Would you look at that view I had recently while staying in Bevard, NC. I was tempted to never leave that seat. The sunset over the Blue Ridge Mountains was incredible. Sharing it with friends…..priceless! (Thanks to Kristen for getting that shot of me)
When I started blogging 8 years ago, I had no idea how rich my life was about to become. I know I’ve said it time and again, but the friendships I’ve made were the unexpected gift I never knew I needed.
I’ve met some of the most amazing, smart, fun, talented women through blogging, many of whom I’ve had the fortunate opportunity to travel with on many occasions.
We, of course, stay connected day-to-day thru texting, phone calls, and social media, but when we get the chance to see each other in person, it’s like we’ve known each other our whole lives.
We’ve always talked about how great it would be if we lived close to one another. Kristen, Amy and Sandy, and I have known each other for over 5 years. Recently, we gathered at Amy’s mountain home in the gorgeous hills of Brevard, NC (just outside Asheville). And let me tell you….what a treat it was!
We enjoyed an amazing view of the Blue Ridge Mountains with no agenda, other than relaxing, laughing, enjoying each other and good wine mixed with a little shopping, eating and of course…..cooking an incredible meal together.
Look at this gorgeous rustic tablescape Sandy put together. and those blue chairs!! Amy has such a great eye for decor!
I threw together a quick little video of our time together.
The wine flowed, music cranked and the table was set……… (in true ‘girl weekend’ form…….earlier in the day I showed everyone how to curl their hair with my curling wand and took we took photos of each other)
Probably one of the best weekends I’ve ever had!

My Favorite Food In Asheville
Well, we did eat out some, and while we were in Asheville I had the most incredible avocado tacos for lunch at Mamacitas and the most insane chocolate desserts at The French Broad Chocolate Lounge. Neither one should be missed if you ever find yourself in Asheville, NC.
But as much as I love dessert…. I couldn’t stop thinking about the avocado tacos!
So, I recreated the tacos as soon as I got home! It’s been my latest addiction…..I might be a little embarrassed to tell you how many times I’ve made these avocado tacos.
They are so simple to throw together, and I usually have everything I need on hand.
These Avocado Tacos are vegetarian, but you could easily add chicken if you want to add some meat, but honestly, they are so loaded, you’ll never miss the meat 😉

Try topping these tacos with Pineapple Mango Salsa or Avocado Cream Sauce and serve with a Beergarita!

What a beautiful place to have a get together, friendships are the truly the icing on the cake when it comes to blogging (that added sweetness you may not have expected) these tacos look amazing, I love quick tacos like this and avocado and black beans are a favorite around here. What a fun post!

Oh my gosh, all of those photos are just stunning and yes I love that view! The Blue Ridge Mountains are so pretty! We live about 30 minutes – 45 minutes from them!
