Pulled Chicken Salad
It’s been SOOO hot here in St. Louis, I’ve been looking for meals that won’t heat up my kitchen, so last week we decided on sandwiches.
Store-bought rotisserie chicken is always perfect chicken salad! This Pulled Chicken Salad recipe is our favorite go-to chicken salad recipe for sandwiches or to serve on a bed of lettuce.
I usually have pulled rotisserie chicken from Costco in my freezer, but if I’m in a real hurry, I’ve even made this pulled chicken salad with canned chicken……..use what you have! This recipe is one to keep on hand all year long.
What Do I Put In Rotisserie Pulled Chicken Salad
This pulled chicken salad is so tasty and can be adjusted to fit your favorite tastes. I think the addition of BBQ sauce and lots of crunch from fresh celery and carrots make this chicken salad perfect for summer.
The list of ingredients for any chicken salad is really about what you like. But, if you start with homemade mayonnaise or a good quality store-bought mayo and rotisserie chicken you’re halfway to a delicious pulled chicken salad!

Rotisserie Pulled Chicken Salad Sandwiches
Ingredients
- 2 cups shredded rotisserie or leftover chicken
- 1/4 cup mayonnaise
- 1 tablespoon barbecue sauce
- 1/4 cup finely sliced celery
- 1/4 cup shredded carrots
- 4 kaiser rolls (or hamburger buns)
- 4 slices American, cheddar or pepper Jack cheese
- 4 lettuce leaves
Instructions
- Combine chicken, Hellmann’s® or Best Foods® Real Mayonnaise, barbecue sauce, celery and carrots in medium bowl. Season, if desired, with salt and black pepper.
- Spoon chicken salad onto rolls, then top with cheese and lettuce.
Notes
This recipe can easily be doubled or more and would be GREAT for picnics!

Your photos are amazing… I have reservation against mayonnaise but will give it a try nonetheless. We also did a similar Barbeque chicken sandwich with ciabatta roll at http://desigrub.com/2010/08/a-tale-of-two-barbeque-chicken-sandwiches/ . There we compared two different kinds of meat (one was rotisserie =chicken) with exact same preparation. We would love to hear any comments you have.
