Help me “Reinvent a Classic” with Alexia Fries

I’m on a mission………and I need your help! I am one of 25 food bloggers (so honored!) who have been invited by Alexia foods to join their challenge to reinvent a classic and create a new French fry variety.
During the next month I’ll be experimenting, cooking, and eating different french fry creations but I need your help. I need to come up with a flavored French fry that you would want to buy. Can you help me?
Let’s start with the potatoes:
What type of potatoes do you like best? Sweet potato or Russet potato?
Next is Fry Cut:
What type of fry cut do you like? Waffle, Crinkle, Wedge or Julienne
Seasoning:
It’s all about the flavor, baby! Do you like sweet or salty? Do you have to have cheese with your fries? What about herbs and other flavorings. Do you have a crazy concoction you like on your fries ? spill it!
Me, I LOOOVE Parmesan on my fries, so that was my first thought, but after 20,000 votes were cast, last years winning flavor was Alexia’s NEW Parmesan Lemon Waffle Fries, which will be available this fall……. so I may need to go another direction.
Right now I have a freezer full of Alexia fries in many flavors we plan to sample to get our flavor ideas spinning. If my idea sounds good enough to the “judges”, it will be one of 4 at this year’s Foodbuzz Festival in San Fransico and put to a nationwide consumer vote! YIKES!! How exciting is THAT?!

I think some type of russet waffle fries with a bacony/cheesy flavor! But could you somehow cut the fat? LOL! Good luck!

What about using bacon salt? That would certainly cut some of the fat 🙂

I like mine real thin and crispy, sprinkled with herbes de provence and sea salt. And I like to dip them in Dijon mustard.
YUM!!! you know I’ve never dipped my fries in mustard…..my girls dip their fries in everything!

I dip my fries in mayonnaise and horseradish or mayonnaise with Dijon. Plus, my favorites are Sylvie’s favorites, too. I’m moving to her house. I hear the weather is great there. 😉
1. Russet Potatoes make the best french fries.
2. Crinkle cut is good and I like a regular straight cut
3. I’d prefer salty and savory to sweet fries so perhaps adding Montreal Chicken and Montreal Steak spice to the fries would be neat with a touch of garlic. Would go great with steak and chicken dishes.

I’d love to see a salt and vinegar fry, in fact – more of a chip like what you’d get in England. They’re chunky thick cuts, but still the fry shape.

I was going to suggest the same thing! In New England, many people add vinegar to their fries, and I’d love some that already have the vinegar on them!

My favourite fries are always the julienne ones that come with the steak sandwiches au jus. They are thin and crispy and just perfectly salty and when you dip them in the jus oh, heaven. Not sure how to recreate the flavour of the au jus but perhaps some sort of beef flavouring cubes ground up and sprinkled on top? Good luck, look forward to seeing what you come up with!

I think my two favourites would have to be either:
waffle cut russets (possibly with cayan/paprika/chili powder) with salt and dipped in mayo.
OR
Julienne-style sweet potatoes with salt (and maybe a bit of honey to bring out the salty-sweet contrast)!

My daughters would love a xxxxx flavored fry choice, since they love xxxx flavored potato chips!
I would like a sweet potato with buttery flavor, and brown sugar & cinnamon…because I’m a fat girl that likes things sweet & bad for me!
A loaded baked potato flavor would be good too, sour cream, butter, chives, bacon…all that bad for me stuff.
I sometimes mix cut up potatoes, oil & onion soup mix and bake it up, that flavor of a french fry would rock.

Sweet potatoes and they need to be thin and crispy. Also, salty. not sweet and no cheese. the Montreal steak seasoning sounds like a good start. how about a Worcestershire or balsamic kick?
I love Alexia fries…especially the Chipotle Sweet Potato Fries!
I’d definitely go with another sweet potato fry, probably crinkle cut. They have so many salty/spicy, I think I’d do a sweet one for a new flavor. Have you ever put maple syrup on your sweet potato fries? Yum! Or, the MarketPlace Grill (Arkansas) smothers them in a sweet butter sauce. YUMMMMM!
For me, the thinner and crispier the better. I hate mushy fries. Seasoned is my first choice, but if I have a plain shoestring fry I like to dip it in a mix of ketchup (must be heinz) and mayo. Yummy! I like the seasoning that Arby’s has, but i don’t know what they use. I have sprinkled taco seasoning on before to get a similar effect. How about taco ones that you dip in sour cream?

sweet potato fries cut in waffle shape with cinnamon and sugar…like the sweet potatoes from Lone Star steak house….yum! Or with a ranch flavoring!! Good Luck! Sounds fun!

I don’t care for the new Sweet Potato fry craze. I love a good ol’ Russet fry. 🙂 Next, waffle cut and crinkle cut are my two favorites. I personally despise wedge fries. 🙁
As for flavor… I’d love to see a fry that would be good dipped in marinara sauce. Maybe an italian herb flavor – lots or oregano and basil. Throw some marinara or meat sauce on top and melted mozzarella and viola! French fry pasta for dinner! Perhaps to make it “healthier” the fry could be zucchini and potato with the italian herbs/seasoning.
oh man…love that brand of fries in any variety!! A whole new one in the mix..waahoo…I LOVE the waffle style…russet potato……something with cheese & seasoning would be amazing!
I LOVE sweet potato fries! Alexia’s are definitely delicious, but the coolest-tasting sweet potato fries I’ve had were at a little Korean BBQ wings joint here in NYC. They had a little salt, but they also had cinnamon-sugar (or maybe it was brown sugar… it was hard to tell) on them! It was an amazing combination of flavors, & I think even a touch of chili powder for a “kick” would take them over the top!
I’m from MN and I swear we put ranch on EVERYTHING here! I know a great wedge or straight cut fry with some ranch seasoning would be a huge hit in my house! Another option would be a buffalo type spice – and of course we would dip them in ranch to counter the heat… 🙂

Similar to amber’s idea above. I had some homemade crispy almost like a chip at a restaurant with an amazing salt and vinegar sauce…they were amazing. Maybe some parsley on top too.
Russet fries for me! Dipped in ranch! Yum!
How about something Indian inspired? Mmmm, like a spicy coconut curry/korma? You could dip them in a yummy chutney! I just might have to go try to make some myself!!!
I am from the north and we either like our fries with salt and vinegar or gravy served on our fries. I live in the south now and can’t get gravy fries anywhere!
I am getting hungry reading all of the ideas. I still want shoestring fries with parmesean, garlic salt and parsley. But I like vinegar fries, the loaded ones that everyone says is on the top ten things of worst things to eat? I looved the marinara idea,
I LOVE crispy, salty fries. IN N OUT fast food restaurant has the best french fires! I would like to try an aged cheese flavor, I love aged cheddar and blue cheese.

Yum… I love my fries to be crisp! And, lately, I just can’t get enough of sweet and spicy! I’ve been making a lot of homemade sweet potato oven fries! 🙂

Russets definitely rock. Salty over sweet…wedges or straight cut…(crinkles are good, too).
I LOVE Feta cheese with my fries…actually, I know this is weird, but I love to have a big Greek salad with fries…then I like to dip my fries in what’s left over after I finish the salad (with extra Feta…) – yum…oil, vinegar & Feta…

I’m a big fan of sweet potato fries – and I love them crunchy. The salt on the fries goes so well with the sweetness of the potato…I have no idea what a new flavor concoction would be, though. I’ll watch your journey and will be happy to test your recipes 🙂
If there are more specifics regarding the contest rules, if you could post them that might be helpful. Viewing this from a marketing perspective, it would seem the odds of winning would be in favor of creating something entirely different from products they already sell. And although a hint of truffle oil would be great, it would not make for a good price point to sell.
Personally I like to dip my fries in a mixture of orange marmalade and thai style chile sauce. But, a reduced balsamic flavor is always good, or even pesto (finally, something to serve with a meatball sub!) Good luck! Can’t wait to see what you create!

We are from Maryland and love Old Bay on our fries. Last night we ate out and the restaurant had homemade old bay potato chips. YUM!
I LOVE sweet potato fries…i make them all the time! I just posted a link on my blog last week…salty with a little kick. Mmm…..now I want fries…at 7am. 😉
russet, wedge and salty . . . but wait . . . a good sweet potato fry is a thing of beauty . . . you know . . . i never met a potato i didn’t like . . . afraid i’m not going to be much help in the ‘definitive’ department!!
A restaurant near us serves truffle oil fries – the subtle, earthy flavor is wonderful! The classic Julienne cut is my favorite, especially when it’s perfectly crisp on the outside.
I like russet fries. How about sour cream and onion curly fries.. or chili cheese spiced curly fries?
My favorite french fry with russets is topped with bacon and cheese my favorite sweet potato fry is drizzle with a little olive oil and sprinkle on chipotle chili powder

I love sweet potato fries and I love waffle fries, but never tried both in one… It would prob depend on the seasoning.
But for some reason your post has me thinking sweet potato fries and bleu cheese! Is that totally bizarre? I’m thinking of a delicious burger w bleu cheese and sweet potato fries… and getting really hungry right now!
I also LOVE parmesan truffle fries from Capital Grille… mouth watering! And you can sprinkle w a tease of truffle oil or truffle salt. (not sweet potatoes, but more like a thick shoestring)…

I love sweet potatoes and I love Alexia for making sweet potato fries available. I like Julienne and waffle cuts the best. As for flavors I have several ideas.

I love rosemary and potatoes together! Not sure how that would be on sweet potatoes (but I love ’em) so might need to go the russet route… definitly like ’em crispy, so Julienne all the way. I just know you’ll come up with something great, Cheryl! And thanks for the coupon link! I haven’t tried Alexia before, but will now!

I love cilantro. How about a fry with a mexican flavor that the cilantro is noticeable!
they have to be crispy and on the verge of well done. i like them on the skinny side, thus I cannot and will not eat a mushy french fry :)! I like them simple – twice fried is preferable with a little sea salt, pepper, and dash of chili powder. Have fun!
I LOVE waffle fries! They are my favorite! As for flavor, a little spicy and a little sweet! I think a Cajun flavor or Jamaican Jerk would be great! MMMMmmmm….. And NOW I want fries and Jamaican jerk chicken!!!

One of my all time favorite fry is a sweet potato fry with wasabi mayo. But that doesn’t usually go over to well with the 6 y/o in the house, so usually I opt for a good old fashioned shoestring with a little bit of seasoned salt and I dip it in homemade ranch while the rest of the household goes for the ketchup 🙂
