Wow, another holiday season is over. But, I have one more holiday gift to giveaway! See how you can enter to win a KitchenAid Pro HD 5 qt Stand Mixer at the end of this post! EDITED: GIVEAWAY HAS ENDED
I hope you were surrounded by the ones you love most! Our holiday seemed to just go on and on and on, and I was sad to see it end, as out of town family loaded up their car and headed back to Kentucky yesterday.
It always seems like SO much prep, and then BAM! it’s all over way too fast!
Right before Christmas the good people at Sam’s Club challenged several bloggers to create a holiday meal with an assigned budget. My budget was $60, and I decided to use it for a pre New Years Eve dinner with just the four of us.
I had been cooking, and baking all week, so I decided to let Sam’s Club do the cooking for me! I wanted an easy, yet delicious meal we could all enjoy.
Sam’s Club made it simple. By shopping their Artisan Fresh section, I was able to put a great tasting meal on the table with little stress for me! – and we even have left overs!
Budget Friendly Holiday Meal
I couldn’t have come much closer to my budget! My total was $59.21.
Here’s what I picked up:
// ]]>
Chicken and Bacon Bruschetta ($9.98)
Chicken Fettuccini Alfredo ($10.88)
Spring Mix for salad ($4.47)
Herb & Garlic Focaccia ($2.78)
Artisan Fresh Cheesecake Sampler ($14.98)
Wine ($12.98)
$56.07 + $3.14 (tax) = $59.21
This was a nice treat and holiday meal that wouldn’t break your back or budget, leaving more time for family and guests! You could stretch your dollar even further if you wanted to cook your own meal. Sam’s Club has taken all the work out of that for you too, with their Simply Delicious Meals site, full of recipes, meal plans, wine pairing and even shopping lists!

My favorite New Years meal – no meal at all! Just snacks…chips and salsa, kettle corn, crackers with salami and cheese etc etc! Also liked on FB 🙂
Taco Meatball Ring- Super simple to make, but looks like u did lots of work and all u need is 1 Lb of cooked, drained and cooled meatballs (homemade or store-bought), 2 tubes of crescent rolls, whatever u like on a taco-I use re-fried beans, salsa, lettuce, shredded cheddar cheese, guacamole, chopped tomatoes, & sliced green onions.
Take crescent rolls and lay them out to look like a “wreath”, wrap each meatball so crescent roll is partially laying flat and partially covering meatball, bake as directed. Cool then layer the center of meatball ring with lettuce, refried beans, guacamole, salsa, cheese, tomatoes, and green onions. Cut into wedges and enjoy!
For New Years Eve we like to keep it fun and simple. So we usually do finger foods and appitezers. This year my Husband is making wing, BBQ and Honey BBQ, I’m making ranch spinach dip, there will be crackers and vegies for that, and I’m making little hot dogs wrapped in crossiants. We have snacks like chex mix and chips & a friend bringing a dish. We have an arrary of desserts cookies, lemon bars, pecan pie pars, buckeyes and chocolate covered oreos. I bake a ton at Christmas and make sure I stash some away for New years eve.
Happy New Years!!!
