BRANDIES PUMPKIN PIE
Ingredients: 1 (8oz. pkg) cream cheese softened, 2 cups canned pumpkin, mashed,1 cup sugar, 1/4 tsp. salt, 1 egg + 2 egg yolks slightly beaten, 1 cup half n half, 1/4 cup melted butter, 1 tsp. vanilla, 1/2 tsp ground cinnamon, 1/4 tsp ground ginger,1 pre-made pie dough.
Directions: Pre-heat oven to 350deg. F,place pie dough in 9 in. pie pan,press bottom and sides and crimp edges,place in freezer 1 hr. to firm,fit aluminum foil to cover inside shell fill up to edges w/pie weights or dried beans,bake for 10 mins. remove foil n weights, bake for another 10 mins., combine ingredients, beat w/hand mixer, pour into pie shell, bake at 350 for 50 mins. or until center is set.
This is my Step-daughters wonderful recipe!!

Eggnog Pumpkin Pie
Ingredients
1 can (15 ounces) solid-pack pumpkin
1-1/4 cups eggnog
2/3 cup sugar
3 eggs
1-1/2 teaspoons pumpkin pie spice
1/4 teaspoon salt
Pastry for single-crust pie (9 inches)
Directions
In a large bowl, combine the pumpkin, eggnog, sugar, eggs, pumpkin pie spice and salt. Pour into pastry shell.
Bake at 375° for 60-65 minutes or until a knife inserted near the center comes out clean. Cool on a wire rack. Refrigerate until serving. Yield: 6-8 servings.

NOTHING intimidates me in the kitchen more than pie crust! I just can’t do it… I have all the tools, all the ingredients, but I just cannot get a good pie dough to come together. I keep trying – blogs like yours, Teresa’s and Bridget’s keep me inspired and keep me trying! xxoo Janet
