The purpose of a pastry shell was mainly to serve as a baking dish, storage container, and serving vessel, and these are often too hard to actually eat. For hundreds of years, it was the only form of baking container used, meaning everything was a pie.

There are few things as American as apple pie, as the saying goes, but like much of America’s pie tradition, the original apple pie recipes came from England. Pies today are treats made around the world, filled with everything from sweet apples to savory chicken.

For crust
3 cups all purpose flour
2 1/2 teaspoons sugar
3/4 teaspoon salt
2/3 cup chilled solid vegetable shortening, cut into pieces
1/2 cup plus 2 tablespoons (1 1/4 sticks) chilled unsalted butter, cut into pieces
10 tablespoons (about) ice water
For filling
3 1/2 cups 1/2-inch-thick slices trimmed rhubarb (1 1/2 pounds untrimmed)
1 16-ounce container strawberries, hulled, halved (about 3 1/2 cups)
1/2 cup (packed) golden brown sugar
1/2 cup sugar
1/4 cup cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg yolk beaten to blend with 1 teaspoon water (for glaze)
I figure people who cook often don’t need as detailed instructions, so I always shorten them as much as possible. Here is my version of the instructions:
1) Make the crust
2) Mix the filling
3) Put filling in crust
4) Brush with glaze.
5) Bake @ 400 for 20 minutes, then at 350 until golden, about 25 minutes.
6) Let cool, serve, savor.

My Mom’s Spinach Pie
1 box refrigerated pie crust (you can make your own if you like)
salt & pepper to taste
1 10 oz package frozen chopped spinach thawed ,squeeze all the water out
3/4 c chopped leakes
1 1/2 cups feta cheese crumbled
1/3 c grated Pecorino Romano or Parmesan cheese
2 lrg eggs beaten
1 egg plus 1tsp water beaten for brushing on the pie crust
9 inch glass pie dish (it seems to cook better in the glass pan for some reason )
preheat oven 350*
ina a bowl mix spinach ,leaks, feta, pecorino romano salt & pepper to taste. fold in the beaten eggs until combined. Place bottom layer crust in pie dish,spoon, mixture into crust. place top crust over mixture and crimp the edges. Brush crut w/ egg water mixture (you will not use it all) Place in middle rack and bake until brown on top (it usuallytakes about 45-50 mins ,depending on your oven)

I don’t have a blog but i’d love to share my family’s favorite pie recipe.
Sugar Cream Pie
3/4 cup sugar
2 1/2 cups half & half
1/4 cup brown sugar
1/4 cup corn starch
1/4 tsp salt
1/2 cup butter
1 tsp vanilla
1/8 tsp cinnamon
9″ pie crust – lightly baked
1. Preheat oven to 325°.
2. In a medium saucepan combine salt, sugar and half & half – bring to a boil, stirring occasionally.
3. In another saucepan combine brown sugar and corn starch. Gradually whisk in the hot half & half mixture – add butter. Cook mixture over medium heat, stirring occasionally, 5 minutes or until boiling and thickened. Simmer 1 minute – stir in vanilla.
4. Pour into lightly baked pie crust and sprinkle lightly with cinnamon. Bake 20 minutes our until golden brown. Pie will thicken as it cools.

White Chocolate Macadamia Nut Pie
Pie shell (either pre-made or your own recipe)
6 1/2 oz cream cheese
1/3 cup sugar
2 1/3 cups heavy cream
7oz white chocolate chips
zest of 1 orange (optional)
small package of macadamia nuts
3/4 cup whipped cream
3/4 cup chocolate chips
1/4 cup powdered sugar
Beat 6 1/2 oz cream cheese with 1/3 cup of sugar until smooth, scrape sides of bowl with spatula and mix in 1/3 cup of heavy cream. Add 7oz of melted white chocolate chips, the zest of 1 orange (you can leave out orange zest if you prefer, I like it but my hubby doesn’t), 2/3 of package of crushed macadamia nuts, stir to incorporate, fold in 3/4 cup of whipped cream, spread into pie shell and level with spatula, freeze for 1-2 hours.
Boil 1/2 cup of heavy cream (careful not to scorch) pour over 3/4 cup of chocolate chips and mix until melted (if needed you can use your microwave to get smooth consistency, but be careful and do it in 10 second increments). Pour over frozen pie, smooth and let sit until slightly cool.
Beat together 1 1/2 cup heavy cream, 1/4 cup of powdered sugar and remaining macadamia nuts until stiff peaks form. Spread over pie and put in fridge.
ENJOY!!! SOOOO YUMMY!!!
