Ingredients
For The Casserole
- 12-16 ounce loaf brioche bread 1-2 days old, cubed
- 6 eggs, beaten
- 2 cups milk
- 1 cup pumpkin puree
- ⅓ cup maple syrup (+ extra for serving)
- ¼ cup heavy cream
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- ⅛ teaspoon coarse kosher salt
- 1 cup chopped pecans
For The Streusel Topping
- 1 cup all-purpose flour
- 6 tablespoons unsalted butter, softened
- ½ cup light brown sugar
- ¼ cup white granulated sugar
- ½ teaspoon pumpkin pie spice
- ½ teaspoon vanilla extract
- ⅛ teaspoon coarse kosher salt
Instructions
- If your bread is not 1-2 days old, let it lay out uncovered on the counter for 2-24 hours. *See the notes below if you don’t have time to do this.
- Coat a 9x13 baking dish with nonstick spray. Set aside.
- In a large bowl mix the eggs, pumpkin, syrup, cream, pumpkin pie spice, vanilla, and salt until combined.
- Transfer the cubed bread to the baking dish. Pour the custard mixture over the bread.
- Cover and place in the fridge for at least 2 hours. Overnight is best.
- Preheat the oven to 350° F.
- Add all the streusel toppings to a bowl. Mix with a fork or clean hands until combined.
- Cover the casserole with the pecans and streusel topping.
- Bake for 30 minutes or until the streusel is golden brown.
