Wow what a busy few weeks it’s been around our house. Our youngest has danced thru prom, toured San Francisco, geared up for senior finals, accepted awards from the National Honor Society and we couldn’t be more proud as we reach graduation in a few short weeks.
I’ve been going thru pictures for her senior ad in the yearbook and I’m hoping to put together a slideshow for her graduation party.
I remember her pre-school graduation like it was yesterday. Allison, for some reason, was rather annoyed with the whole idea of a graduation ceremony lol…..and if you know her at all, she doesn’t keep it a secret if she isn’t happy about something. She really loved pre-school and her teacher Ms. Bobbie, so I think she was upset that this graduation meant the end of something she loved.
I’m pretty sure her high school graduation will bring big smiles and happy tears as she ends this chapter in her life.
While we are caught up in a flurry of ordering graduation announcements, printing senior pictures and planning a college summer welcome visit, we’re also planning a graduation party. Whew….I’m exhausted already….. and life marches on.
This BBQ Ranch Chicken Salad Sandwich is one recipe I plan to serve at the graduation party. We love it for a quick weeknight meal or lunch because it’s so easy and full of flavor. It’s an easy recipe to multiply for a crowd, and is simple enough kids will enjoy it, yet full of flavor adults will love!
I usually just pick up a rotisserie chicken from the grocery store (you can always cook the chicken yourself if you’d prefer). Slice up a little celery, shred some carrots and toss in a bowl with the chicken and combine with some creamy Marzetti® Classic Ranch Dressing. Add a little of your favorite barbecue sauce for a taste of summer, serve on ciabatta or kaiser roll and you have an easy and delicious sandwich for any meal or summer celebration!

BBQ Ranch Chicken Salad Sandwich
Ingredients
- 2-3 cups shredded rotisserie or leftover chicken
- 1/4 cup Marzetti Classic Ranch Dressing
- 3 tablespoons barbecue sauce
- 1/4 cup finely sliced celery
- 1/4 cup shredded carrots
- Salt and pepper
Instructions
- Combine chicken, ranch dressing, barbecue sauce, celery and carrots in medium bowl. Season, if desired, with salt and black pepper.
- Serve cold on your favorite rolls.
