It’s that time of year……..cold winter weather and soup. They just go hand in hand. Even if you’ve had a mild winter like many of us have, there’s still nothing better to warm the soul. Soup, stew, chili, chowder…….have all been staples in our diets for centuries and can be the perfect appetizer or a quick and easy meal.
Last year Kristen of Dine and Dish and I hosted Soupapalooza and it was such a huge success we promised to bring it back this year, even bigger and better!
So this year KitchenAid, Kristen and I, along with some other wonderful sponsors are inviting you to share your favorite soup recipes here at TidyMom.net and DineandDish.net starting February 28 thru March 5, 2012.
and like every great party……..there will be prizes from some fabulous sponsors!!
Big thanks to KitchenAid, Red Star Yeast and Le Creuset

One of my favorite soups is just a big pot of chicken soup with either rice or noodles.
Cut up one whole chicken
put in pot, add water, cook chicken. when chicken is cooked remove chicken, debone, pour broth thru strainer. add onions, carrots, cerely, can of garbanzo beans, add chicken back in. salt & pepper
make rice or put noodles in broth and they will cook that way. doesn’t get any easier or better.
barb
Sorry if it was confusing to you Barb. But this post was just announcing the party and the date.

I do not have a blog so here is my favorite kind of soup recipie…
Creamy Chicken and Wild Rice Soup
Ingredients
4 cups chicken broth
2 cups water
2 cooked, boneless chicken breast halves, shredded
1 (4.5 ounce) package quick cooking long grain and wild rice with seasoning packet
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup all-purpose flour
1/2 cup butter
2 cups heavy cream
Directions
1. In a large pot over medium heat, combine broth, water and chicken. Bring just to boiling, then stir in rice, reserving seasoning packet. Cover and remove from heat.
2. In a small bowl, combine salt, pepper and flour. In a medium saucepan over medium heat, melt butter. Stir in contents of seasoning packet until mixture is bubbly. Reduce heat to low, then stir in flour mixture by tablespoons, to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Cook until thickened, 5 minutes.
3. Stir cream mixture into broth and rice. Cook over medium heat until heated through, 10 to 15 minutes.
I love Kitchenaid products and I hope I will win this contest, it would be a blessing to own one of these items, that I have heard are the best.
My second favorite soup: Lima Bean!
4 16-oz cans lima beans
12 cups water
6 cubes chicken bullion
1.5 lb chopped chicken sausage (the precooked kind)
2 onions, thinly sliced
salt, to taste
ground black pepper, to taste
1 t. garlic
1 teaspoon basil
3 potatoes, chopped
3 carrots, chopped
Rinse and drain beans. In a large stock pot, Cover drained limas with water, seasonings, and veggies.. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender. Add chicken and hot until cooked through.
