Help me “Reinvent a Classic” with Alexia Fries

I’m on a mission………and I need your help! I am one of 25 food bloggers (so honored!) who have been invited by Alexia foods to join their challenge to reinvent a classic and create a new French fry variety.
During the next month I’ll be experimenting, cooking, and eating different french fry creations but I need your help. I need to come up with a flavored French fry that you would want to buy. Can you help me?
Let’s start with the potatoes:
What type of potatoes do you like best? Sweet potato or Russet potato?
Next is Fry Cut:
What type of fry cut do you like? Waffle, Crinkle, Wedge or Julienne
Seasoning:
It’s all about the flavor, baby! Do you like sweet or salty? Do you have to have cheese with your fries? What about herbs and other flavorings. Do you have a crazy concoction you like on your fries ? spill it!
Me, I LOOOVE Parmesan on my fries, so that was my first thought, but after 20,000 votes were cast, last years winning flavor was Alexia’s NEW Parmesan Lemon Waffle Fries, which will be available this fall……. so I may need to go another direction.
Right now I have a freezer full of Alexia fries in many flavors we plan to sample to get our flavor ideas spinning. If my idea sounds good enough to the “judges”, it will be one of 4 at this year’s Foodbuzz Festival in San Fransico and put to a nationwide consumer vote! YIKES!! How exciting is THAT?!

In all fairness, it would be completely unethical NOT to try the recipes! How could you possibly put your name on something that you didn’t stand behind? Therefore, it is my opinion that trying each of the fries (as well as sharing the best recipes) is your duty!

must be russet potato, we like our steak cut or crinkle cut. I say something that makes them taste like you already put the ketchup in them or maybe chilli in them. so instead of dipping it is already there.
My family loves everything pesto. Or rosemary and garlic. They’re very Italian, can you tell?
I’m not Italian, and I love sweet potato fries with curry and honey.
I think a russett potato makes great fries.
I like julienne or crinkle cut.
I would love to see it combined with my favorite summer seasoning…DILL. I love the stuff. I grow dill and put it on everything in the summer from fresh steamed green beans to tomato wedges and even make dill mayo for my burgers. I think a dill french fry would be the bomb!
I love the sweet potato fries…wedge or julienne… with honey mustard dip.

I like Julienne cut best. I love crispy fries, not the big thick ones that are soft in the center. I think Ranch would be a great flavor – maybe Parmesan Ranch!
I would try the flavors you think you’ll like on different root vegetables not just potatoes. I’ve wondered if you could do a type of fry with Julienne carrots for example?

I like crinkle cut and a sort of lemony herb taste might be good. I don’t know, but maybe a cheddar chive sort of taste?
I would LOVE to have Jalapeno Fries. Those would be amazing. They could be Jalapeno and Cheddar or just plain Jalapeno flavor. 🙂
I’d say start with Russet potatoes! Sweet potato fries I think are being overdone and we need to get back to good, old fashioned fries 🙂
As for cut, go with waffle cut! They always get nice and crispy on the edges, with just enough softness in the center…
When it comes to flavor it’s hard to please everyone! One of my favorite things to put on fries is salt and oregano!

We just got back from vacation. We had eggplant french fries…AMAZING. They were cut long like a fry and lightly breaded with a beer batter.
